Question about children's books & illustrator's pay?

I need some advice as to which time of rum I should use when making a home-made butter rum sauce. It will be incorporated into other baking, and possibly as a sauce served drizzled over a cake for presentation.
Does dark rum have a more molasses-type flavour over the clear rums?

There isn't a single solitary person who will answer this question who HAS died, COME BACK and can now tell us with any actual authority what the rest of us can expect.
It's all speculation and "the word" handed down by men from more than 1.75 millennia ago, looking for ways to subjugate the masses, especially women. Isn't there anyone with enough integrity to at least admit they don't KNOW anything for certain?

I love to cook. Am a self-taught chef. I frequently make a reasonable fee on the side baking specialty cakes for my co-workers.
I realize there are certain ingredients that cost the earth, but on average, most restaurants don't serve truffles and grade 1 tuna, etc. every night of the week.
SO my question is; what possible excuse is there to charge £50 - £100 per head for a three to five course meal that any really good home cook can produce on any average night?

Mine would be;
1 large can Grandma Brown's baked beans
1 small onion finely chopped
1/2 lb partially cooked thick-cut bacon, diced into 1 inch pieces
Dark brown sugar to taste
Ketchup
1/4 tsp dry mustard
All of it stirred together and slow baked until rich and dark and bubbly.
