Restaurant, Shopping, Transportation and Recreation in Cancun, Mexico?

My wife and I are making our first trip to Cancun for our Anniversary at the end of May. I need some suggestions/experiences with the local activities listed above. We will be staying at the Hilton Cancun Golf & Spa Resort.

What to do and what NOT to do.

I posted a similar question in the swimming & diving section, but any experience with SCUBA diving would also be appreciated.

Thanks guys, but I am fully aware of guide books and such. What I am looking for are people's actual experiences with these items.

    Go to Xel-Ha (huge natural lagoon.. spend all day).. look up their website for more info.. it's a blast.

    Visit Playa del Carmen and possibly take a ferry from there to Cozumel (you'd love diving and snorkeling there).

    Visit the cave restaurant "Alux" (pronounced Aloosh) in Playa del Carmen (it's in a pretty deep cave.. very cool.. small waterfalls etc.).

    There is a big new mall in Cancun, as well as another near the Convention Center, with high-end designer shops. But the prices are in American dollars, and there isn't really a savings on anything. Everything was about the same price you'd find here.

    I'll be sure to warn the local authorities in Cancun of your impending arrival. Looks like US-Mexican relations are about to be set back a century.
