I will be vacationing in Denver July 4th.?
Are there any firework shows? I will be traveling with 4 kids. Are there any "don't miss" sights? Can you recommend good but inexpensive places to eat. I'm not really thinking McDonald's but actually sit down and dine places. Thanks.

Not sure how long you will be here but I always consider Rocky Mountain National Park a don't miss site!

There are lots of fireworks shows. A fun and easy night with the kids - depending on age - might be at a place called Heritage Square. It is a place near Golden that has little specialty shops set up in a kind of western town type arrangement. For kids there are a number of rides, including a big alpine slide. Then at dark are the fireworks.
As someone already said - Casa Bonita is a popular tourist place for a Mexican-type meal with a whole lot of entertainment. I say Mexican-type because we locals all know that the food there is really not very good, but we conspire to not tell the visitors when we take them there.
Depending on the age of the kids, you might also check out Water World, Elitch Gardens, the Children's Museum, and the Downtown Aquarium.
