    Mock Bok Choy Cabbage Salad

3 oz ramen noodle soup mix - Oriental flavor

    2 tbsp. sunflower seeds

    1/4 cup cider vinegar

1/3 cup vegetable or canola oil

2 1/2 tbsp. sugar (splenda is ok)

1 bag coleslaw mix (with carrots)

    1/4 cup sliced almonds

5-6 green onions, sliced (green and white separated)

Remove flavor pack from soup, set aside. Break ramen noodles into pieces and place on lightly greased baking pan. Add sunflower seeds, bake at 350ºF for 5-8 min or until toasted, stirring occasionally.

Whisk flavor pack, oil, vinegar and sugar in a jar until blended. Chill at least one hour.

Place coleslaw mix in a large bowl, add sliced onion bulbs (white part).

About 1 hour before serving, mix dressing into coleslaw mix. Place noodles around the outside edge of cabbage, top center with almonds and onion greens. (Makes a nice presentation, but for our family I just sprinkle all of the above on top).

(If you need a large quantity, use the big bag of coleslaw mix from Sams and doubled the other ingredients .)

This is an alternate dressing not using the flavor pack:

    3/4 cup oil

    3/4 cup sugar

    1/2 cup cider vinegar

    2 tsp. soy sauce

    pepper to taste

    Combine and chill before serving.

You can opt to use 1/2 the packet of seasoning. What I normally do is boil the water, add the ramen, add vegetable (any kind you want to put inside) , meat and when it's cooked (vegetables and meat) I'll beat up an egg and add it inside too. Then you will kind of have egg drop soup too.

p/s: If I am cooking 2 packets for two person I'll only use one packet of the seasoning.

Food network recipe for a crunchy cabbage slaw. I don't remember if it was Paula Deen's show, but the recipe sounded great. It was invented by college kids, who actually published their own book of ramen recipes.

We add the crunchy noodles to salads sometimes.

  • I know this sounds gross, but empty out most of the water after it's cooked, add just a bit of the seasoning, and honey. This is so good. The woman I used to babysit for fed these to her 3 year old, and she couldn't get enough.

We melt a slice of american cheese and a splash of milk in it. Also, stir in some veggies and some creamy italian dressing for a little pasta dish.

boil the noodles and just add a can of cream of chicken soup, cream of mushroom, tomato, cream of celery, or even the campbells cheese soup is good with them.
