Are cattails edible?? daylilies are! what else is good?
what else is edible but usually not known to be?
My sister says that she heard that catail roots are what the Chinese call water chestnuts? anyone else heard this?

Yes, cattails are defiitely edible. You can eat the heads when they are tiny and they taste a bit like corn on the cob. Lovely smothered in butter, as is most any vegetable.
We gathered the pollen in May, stripping it from those sticks that are above the cattail head. It takes quite a lot of work to gather but it's worth the effort. When added to biscuits or other baked goods, it gives them a corny kind of taste, but it's a taste all its own. You have to be sure not to gather heads or pollen or even roots where any kind of chemical spray is used. Since the sun set between our house and the main road, we weren't in danger of contamination by any kind of spray.
You can also pound the roots to get a kind of starch, dry it and use it like flour.
There were many other wild roots, berries, plants, etc. that are good to eat. My absolute favorite is cattail pollen, and my second is steamed thistle roots.
I forgot to say in that last piece that a blue heron nested on the upper side of the upper lake every year and was a beautiful thing to see.

If you split the stem open, you can eat the guts of it. Don't eat the tops raw or when they're mature, they'll just be a big, fluffy mess. This is really more of a survival/outdoors question. Pick up a survival guide with listings of edible plant life for whatever particular ecosystem you're dealing with.

Rose petals are excellent and can be served in your salad.Wash and dry them ;serve with your favorite rice on top. You can also mix your vegies with dry rose petals ;they add a "je ne sais quoi" to the flavor of your vegies with a dash of organic vinegar and raw olive oil you have a great dish.Toss them with a vinaigrette with Artichokes and your guests will beg for more.If you want to be a bit more sophisticated ,serve your sherbert with a dash of orange liqueur and sprinkle rose petals on top.There are countless ways to serve your rose petals on a pedestal; you will end up smelling like them.
