I love both James Stewart and Cary Grant, so my votes go to Vertigo and North by Northwest.

Vertigo has such an amazing plot twist and N by NW has the totally original crop dusting scene.

The Birds still scares me, so I can't watch it at all!

Wow! I can't believe no one has said "North by Northwest" That is an awesome flick. Carey Grant working against James Mason is one of the all time great pairings. Then you have all the classic scenes. The crop duster trying to run Carey down in the cornfield. The amazing finale hanging across Mount Rushmore. And how many variations have been done on that film. Truly Hitchcock's best and one of the best films of all time.

My favorite Hitchcock will always be "Rear Window" (fantastic acting by James Stewart, Grace Kelly and Raymond Burr); a very close second would be "Strangers on a Train" (again superbly acted by two great screen legends, Farley Granger and Robert Walker)
