It might be the strong citrus from the pineapples rubbing on your taste buds. I know what you mean though.

Maybe you're mildly allergic to it.
I have a severe allergic reaction to pineapple, meaning I break out in hives and my throat can swell up...if your tongue just feels itchy you probably are having a minor reaction.

Sounds like you have a bit of a food allergy. I've never experienced that problem with pineapple.
