Try www.ellisisland.org Look up your grandfather's name; if he came through Ellis Island, he will be there. Then click on "Passenger Manifest" and it will give you a lot of information, not only on the ship, but on who he traveled with. It's a great site!
If your grandfather doesn't come up, try alternate spellings for his name...sometimes they wrote down the names wrong.

I would go to a Geneaology Center, or at least website. Boats probably have records on microfilm, which might contain your grandfather's name. I assume he emigrated to New York: if you are near the area, that would be helpful. The website I linked to looks helpful.

You might see if Ellis Island has a website, but I know the Sons of Italy in America has one, though you might have to be a member to gain such info.

Determine the port of entry. If it was Ellis Island, look through their records.

If he has a very common name, you might also need to know the name of his town in Italy to figure out which one was him.

maybe you've already tried alot of websites re family trees- only thing i can think of is the register @ ellis Is or if you know which port? my grandma came here about then from italy & refused to learn english even thou most of her life was spent here. neat bunch of people!

you can look for ship passenger lists, they have a lot of them on line, you need to know what city he came into, search for free at ancestry .com, or check out the Ellis island web site for more info. good luck, it can be a lot of work.
