What are good sides to go with Lasagna?

I am planning to cook a delicious lasagna on Thursday and I need some examples of some delicious sides that would work well with this meal. I plan on getting some garlic bread, so what else would be great?

Also, what is a good wine to get for this type of meal?

    The wine should be red, a decent Chianti (pronounced Key-on-tay). If not Chianti I like Merlot. If this is for a date or special dinner get a decent wine, expect to drop about $20 or so it. As for sides. You have to have salad, I like Caesar and it's easy. But any salad with and oil and vinegar dressing will do. Make sure to get fresh produce for it. Also some freshly grated Romano cheese will be good for the salad.

    I'd also start with an appetizer of calamari (fried squid) you can generally buy this frozen and it will still be fine. But if possible actually fry it not don't just heat it in the oven.

    Here in my neck of the woods (St. Louis MO) the local Italian places are know for a dish called toasted ravioli. Basically you take meat ravioli and bread it then deep fry sprinkle cheese and serve with red sauce. Yummy!

    Finally for desert get a tiramisu and canoli. If you can find an italian bakery they should have both of the these. Serve with a good cup of coffee or a glass of port and you'll be living in the tall cotton.

    The best side dish for lasagna would probably be a salad. You don't want a salad with meat since you'll have meat in the lasagna, but maybe lettuce, tomatoes, cheese, onions, etc. Bread always goes great with pasta. Get some french bread and some olive oil and eat together (you know, like at the Italian restaurants). Another good side would be baked potatoes, maybe with sour cream or something.

    And for wine, i'd say Chardonnay.

    A really good salad with a vinegrette dressing would be great with lasagna. You can make croutons out of your garlic bread for a good crunch in the salad. My favorite salad with lasagna is baby spinach with carrot shreds, peppers and slivers of parmesan cheese. A great easy dressing is olive oil, balsamic vinegar, salt, pepper, and chopped fresh garlic all whisked together. Also, get a bottle of pinot noir. A good pinot noir is Willamette Valley Pinot Noir. It is from Oregon and goes great with anything. Another good side dish for lasagna is green beans sauteed with garlic and olive oil.

    The perfect bread can only be purchased at a restaurant in Boston! You know the one! lol

    Seriously though when I make lasagna I usually serve it with a tossed salad,cottage cheese,black olives,and sometimes corn on the cob. And don't forget the garlic bread! hehehehe

    As for dessert,your choice on this one. Pick your favorite and go with it.

    I am not a wine person at all so can't help ya with that one.

    I think a good green salad would go very well with lasagna. Along with the garlic bread you are offering, I don't think you would have to offer anything else. Usually with lasagna you don't want to have a load of sides, it's enough of a meal itself! But since it is heavy, I would opt for the salad. You can "dress" it up a bit by adding some nuts, fresh tomatoes, shredded carrot, even some raisins in the salad, and have a good salad dressing. (I HIGHLY recommend Girard's salad dressings, they are REALLY gourmet and you can find them in the specialty dressings section in your supermarket, or order them online. They are in a glass, triangle shaped jar, see their website here:)

    If you go for the Girard's, I highly recommend the Raspberry dressing, which would be a good "variety" to go with the lasagna. It will also leave your guests " talking" about the wonderful salad you had at your table, since these salad dressings in this line are REALLY good and unusually so. I actually was introduced to them by my husband, who had asked a very fine restaurant in the San Francisco area what type of salad dressing they used (who were renown for their salads). So that's my suggestion, use leaf lettuce or a mix of greens, with some chopped walnuts, raisins and some fresh chopped tomatoes and maybe a little shredded carrot for "color".

    Pinot Noir

    for a side dish

    Baked Corn Souffle Recipe

    Ingredients:

    1 cup yellow cornmeal

    3 teaspoons baking powder

    1/2 teaspoon salt

    1/2 pint sour cream

    1 (15-16 oz.) can cream style corn

    3/4 cup oil (may use less)

    2 eggs, beaten with fork

    1 small can green chilies, diced

    Lots of grated Tillamook cheese

    Mix ingredients in a three inch deep casserole.

    Top with grated cheese.

    Bake uncovered in preheated 375 degree oven for 45 minutes

    A great wine pairing would be a middle of the line Chianti. As everyone else has said: a nice Caesar salad or Italian salad with good garlic bread.

    Salad - caesar or a house salad with vinagrette

    Caprese Salad

    2-4 Large, fresh, ripe tomatoes

    8 ounces sliced mozzarella

    1 bunch Fresh basil

    2 tablespoons Olive oil

    1 tablespoon Balsamic vinegar

    Salt and freshly ground black pepper to taste

    Wash tomatoes and basil. Cut tomatoes into thin-to-medium slices. Place a single layer of basil on four plates (3-4 leaves each); then layer tomato slices on top of the basil (3-4 slices per plate). Top each slice of tomato with mozzarella. Drizzle one-half tablespoon of olive oil and one-quarter tablespoon of balsamic vinegar over each dish, and lightly season with salt and freshly ground pepper. Cover and refrigerate for 15-30 minutes before serving.

    Wine

    A light Pinot Gris or Pinot Grigio has the tartness to counterbalance a lasagna with cheese thick tomato sauce. If you prefer red wine, try a Cabernet Sauvignon, with the depth and structure to stand up to the concentrated flavor of the sauce and temper the richness of the dish.
