How long does deli sliced roast beef stay fresh?
When I buy the deli sliced roast beef it is pink but changes color within a day or two. Is it safe to eat when it turns brown? How long can I store it in the refrigerator?

Smell is the best way to tell.
Usually when I buy deli sliced roast beef it only lasts 3 to 4 days. The color changes when it's on the way out. If it smells funny or sour, then it is bad. If it still smells okay, it's probably fine.

The next time you purchase some; ask the deli-slicer person.
Never, ever use after two days. Purchase in small amounts or FREEZE, but only for a short time -- it will lose all of its flavor. Better yet, Vacuum seal it and then freeze. Cheapest option -- go to the deli more often -- after all, you don't know how old the stuff is they are slicing for you! If you have a deli person that you trust, they will always tell you, TWO DAYS.

Deli meats are cooked. They will stay good at home for quite some time. Keep tightly wrapped. Air can make it change color. How long to you think the deli has meat in their cases. Ask them. You can always go by the smell. When it doubt, toss it.

It won't be bad, but it won't taste good. It's oxidation, it gives the meat a funny smell and flavor. It won't kill you, but it doesn't taste good. When I buy roast beef I expect only to buy enough for 1 - 2 days only.

No! Don't throw it away after 2 days! If sealed and refrigerated properly, you can keep your meat for 4 days.
