When I bake a cake, the layers don't seem to rise enough.?

I think my oven thermostat is broken. My oven seems to heat higher than the dial is set to. Would this cause my cake problem?

Update:

Sorry, it is a mix, and this is not the first time it has happened so I don't think the mix was too old.

    notmuch--- here are the things that come to

    my mind. If you are using a box mix follow the directions to the letter epically the mixing time directions. Over mixing could be the problem. If you are making cake from scratch again follow the directions.

    Cream the sugar and shortening until light

    add eggs one at a time cream well after each egg is added. Scrape sides of mixing bowl down after last egg is mixed in. Mix well after scraping mixing bowl down.

    Alternate adding the flour and liquid start with flour and end with flour. Scrape mixing bowl down again after the last of the flour has been added Mix 1 1/2 to 2 min.

    Also make sure the baking powder is fresh.

    The best that I can remember it takes 12 oz

    of batter for a 9 inch cake pan with 1 1/2 to 2 inch sides.

    Check your oven temp. to make sure it is at

    the temperature you need.

    Yes, it could. Buy an oven thermometer and use it for best results. They only cost a couple of bucks.
