what is the difference of bleached and unbleached flour?
if the recipe calls for unbleached, is it okay to use bleached?

yes. the only dif is that bleached flour has been....well, bleached :) using chemical whiteners. I personally prefer unbleached. at least it's got a few less chemicals in it :) but it shouldn't make any dif in your recipe

From what i have heard, unbleached flour ages unaided over time, bleached flour uses chemicals to speed up the process.
Unbleached flour has more gluten so it is used more to make yeast breads and sturdier baked goods. Bleached flour, having less gluten and being finer, generally produces a slightly lighter/softer product, so its more suitable for delicate baking and pastries. The other consideration is colour; if you want what you are baking to be unaffected by the colour of the flour you would use bleached.

Yeah, theres no real difference
they use Chlorine Dioxide in bleached flour to take away some of the natural yellow pigments thats in wheat.
bleaching also destroys some of the vitamin E, but its usually not a concern.

bleached flour is made white (more white) by bleaching it with peroxide. it's done for purly cosmetic reasons
