Do you have a mixed fruit cake recipe with raisin, prunes, mixed rind etc?

I would like to bake a special cake for Christmas for my family and friends, have any to share?

    Fruit Cake

    Ingredients

    1-1/2 cups liquid coffee

    1 (15-ounce) box raisins

    1-1/2 tsp baking soda

    3/4 cup cooking oil

    2 cups sugar

    3 eggs

    3 cups flour

    1/4 tsp baking powder

    2 tsp salt

    1 tsp cinnamon

    1 tsp allspice

    1/2 tsp ground cloves

    1/2 tsp mace

    8 ounces walnuts, chopped

    1 jar maraschino cherries, undrained

    1 pound mixed fruit

    Instructions

    Boil raisins in coffee. (Use leftover coffee.) Add baking soda and let stand until cool.

    Cream together oil, sugar and eggs. Add flour, baking powder, spices and nuts, adding cherry juice and coffee to make mixing easier. Fold in cherries, raisins and mixed fruit. Spoon into 4-5 small greased and floured loaf pans.

    Bake at 325 degrees F. for about 1 hour and 20 minutes. Cake is done when it springs back to a light touch. When completely cooled, wrap in aluminum foil.

    Yield: makes many servings; you put in or take away thats how you do it

    This cake is AWESOME!!! Chocolate Italian Love Cake: 1 box chocolate cake mix 2 (1pd) Ricotta Cheese 3/4 cups sugar 1 Teas. Vanilla extract 4 eggs 1 (4oz serve size) chocolate instant pudding 1 cup milk 1 (12oz) whipped topping, cool whip Prepare cake mix as directed on box. Pour batter into 9 x 13x2 greased baking pan, set aside. Combine ricotta cheese, sugar, eggs and vanilla extract. Blend well. Spread mixture evenly overtop of the chocolate batter already in the pan. Bake @ 350 for approx. 70 min for glass baking dish and 80 min for metal baking dish. when done take out of oven and let cool for 10 min. while cooling blend pudding mix and milk until thickened. Then blend in the cool whip topping. Spread over cooled cake. cake should be refridgerated at least 2 hours before serving. all left overs if any keep in fridge.

    500 g butter

    500g brown sugar

    8 eggs

    250 g breadcrumb

    600g wholeweat flour

    800g raisins

    600g prunes

    600g currants

    200g mixed peels

    2 liters red fruit wine

    1liter jamaican white rum

    3 bottles browning

    50g mixed spice

    100ml lemon juice

    100ml molases

    50g B.P.

    Method

    Cream fat and sugar until fluffy

    Gradually add eggs

    add spices

    Fold in half dry ingriedients

    Blend fruits in wine and rum fold in with other half of dry ingridients

    Bake at 300 degrees F for2 hrs

    Enjoy with rum sauce when friends and family come for the holidays.

    fruit cake is ok but i'd go for something that reguires less time.try maybe pineapple upside down cake. or maybe just the try & true red velvet cake. hope this of some help.

    Fruit cake? nasty... I'd go with a cream pie instead:) or a pear cake... umm sorry I dont have a recipe with me. But you can always google it or yahoo for recipes:)
