I would do finger foods and a champagne punch. Get some nice music on. Buy some flowers.
The best open houses are where there is plenty of space to mingle, and the host is out there with the guests, not busy in the kitchen. So, the food must be simple enough that you just set it out and be done with it.

a buffet with both hot and cold appetizers and simple desserts like squares, bars, tarts, etc. would be really nice. as you said nothing formal but nice! if you wanted you could have a small two tier wedding cake for the happy couple to pose with and cut for photos!
have two bowls of punch, [one alcohol and one not], wine, sodas, lemonade, iced tea and iced coffees as well as hot beverages.
if you have 'good china and silver' nows the time to get it out of the cabinet and use it! it doesn't have to be formal but pretty never hurts!
have a couple of people taking candid shots for you throughout the day and once they are developed do a photo album for yourself and your new daughter-in-law! in her album make notes under the photos telling her who is in each one! she will really appreciate the help in remembering everyone's name when she next meets them!

I have never heard of a wedding open house so I wouldn't know any suggestions. Is it a party for the couple? Are they there? I would guess appetizers and nice music to get people to mingle.

desserts and different drinks party. it ususally goes really well. But we all enjoy eating and have both of them there it will make her feel more comfortable.

the cheapest meal of the day they say is breakfast. you could have a nice breakfast buffet. or lunch, that is cheaper than dinner.
