What is a printing industry standard Mac setup?

I'm currently running OS X Tiger on two 1.83 Ghz Core Duo Mac Minis with 2Gb Ram. I find every day I just don't have enough horsepower to comfortably power CS2 and/or CS3 at the capacity I need to run them. With the new year my IT budget refreshed and I'm looking to revamp our Mac setup.

Should I go all-out for a Mac Pro or will iMacs do the trick?

Keep in mind I run PCs and Macs about 50/50, so I don't need fanboys telling me to jump all the way on one bandwagon or the other.

I've got a Mac Pro, but I've read reviews of the 24" iMac in MacWorld that said they should probably be the computer of choice for most people (over the Mac Pro). Unless you need the ultimate in speed and upgradibility.
