    CABANOSSI PILAF

    1 Stick cabanossi, sliced (0.95c)

    1 1/2 cups long grain rice (0.90c)

    425g can choppped tomatoes (0.80c)

    1 chicken stock cube (0.07c)

    2/3 cup frozen peas (0.50c)

    3/4 cup grated tasty cheese (0.75c)

    Saute cabanossi in a heated greased large frypan until lightly browned. Add rice, then stir over heat for 1minute. Stir in undrained canned tomatoes, stock cube & 3 cups of boiling water. Bring to boil, reduce heat & simmer covered for 15minutes. Stir in peas & cook for a further 5 minutes until liquid has been absorbed and rice is tender. Remove from heat, stir in cheese & serve immediately.

    Serves 4

    Recipe is best prepared as required.

    I use hamburger, chicken, and pork chops. The chops I buy at Smith's/Kroger whatever in the big family size packages. Then I look for recipes using those ingrediants online, I pick the ones using stuff I already have on hand like veggies, and seasonings.

    Buy in bulk and then freeze the meat or cheese what ever in portions that you will use.

    The website is kraftfoods.com you can order the mag for yourself, they also have suggestions for a shopping list for the week, then recipes for everynight of the week.

    I also found a new magazine that I really liked so far called All You. It's like what Womans day used to be before they went to all add's. This mag wa sonly 1.97 and had tons of recipes with the price per seving included.

    I also make chili, stews, soups and pot pies are a great way to use up any left overs.

    I get Kraft food and family magazine, it's free and full of simple recipes with minimal ingrediants. Here are a couple of examples:

    Easy Shepards Pie (I think I will make this tomorrow night) you may need to double this for your fam. And like I said anyleft overs add a little roux (equal parts butter and flour heated until bubbly) and some milk.

    1 pd ground beef

    2 cups hot mashed potatos (instant or homemade)

    4 oz cream cheese cubed

    1 cup shredded cheeder cheese

    2 cloves garlic mined

    4 cups frozen mixed veggies-thawed

    1 cup beef gravy (instant or homemade)

    Preheat oven to 375. Brown meat in large skillet, drain.

    Mix potatos, cream cheese, garlic, and 1/2 cup of the shredded cheese.

    Stir veggies and gravy into meat.

    Spoon into 9in square baking dish.

    Cover and top with potatos, don't worry about getting it super even.

    Sprinkle with remaining cheese.

    bake 20 min or until heated thru.

    Almond chicken dijon

    4 small skinless chicken breast halves

    2 tablepoons mayo

    2 tablespoons dijon mustard

    1/4 Cup slivered almonds coarsley chopped

    Preahat oven to 375 place chicken on lightly greased baking dish.

    Mix mayo and mustard, spread top of each chicken breast with mayo mix. Top with nuts. Bake 20-25 min or until 165 degrees.

    There is another one with Asaian toasted sesame dressing, chicken, angel hair pasta, broccoli, powdered ginger, garlic powder, and terryaki sauce and peants.

    Pasta Lasagna

    INGREDIENTS

    1/2 pound penne pasta

    1/2 pound ground chuck beef

    1 (26 ounce) jar pasta sauce

    1 (15 ounce) container ricotta cheese

    8 ounces shredded mozzarella cheese, divided

    1/4 cup grated Parmesan cheese

    1 egg, beaten

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2 quart baking dish.

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    In a large skillet over medium heat, cook beef until brown; drain. Stir in pasta sauce; remove from heat.

    In a bowl, combine ricotta, 1 cup mozzarella, Parmesan and beaten egg. Stir until well combined.

    In the prepared dish layer half the pasta, half the sauce and half the cheese mixture. Repeat. Top with remaining mozzarella.

    Bake in preheated oven 34 to 40 minutes, until hot and bubbly

    Mom's American Goulash

    1 lb. Hamburger

    2 small cans tomato sauce

    1 can diced tomatoes with juice

    1 lb. Large elbow macaroni

    2 tbsp. Butter

    Salt and Pepper to taste

    Brown hamburger until no longer pink, drain any grease. Prepare macaroni according to package directions. Combine hamburger and macaroni in a large bowl or pot, add sauce, tomatoes with juice and butter. Allow to sit 15 minutes on warm so that macaroni absorbs some of the sauce. Add salt and pepper to taste.

    Makes about 6-8 servings.

    Costs about $8-10 dollars depending on cost of meat. I usually use ground turkey instead of hamburger, so it usually costs the lesser amount.

    Cabanaro (the third a and o are long) for four: Onion, garlic, oil, ham cubed-sauteed together till browned slightly, add 1/2 cup heavy whipping cream simmer 45 minutes or until thick add 1 can peas and serve over bowtie pasta. Under $8-$12 at cheapo store or free if you just shoplift it because they are usually happy someone is doing something with the ham.

    I usually use up whatever I've got in the fridge and tart it up with some seasonings etc. One of our favourites is rissoles using cold lamb (or beef) left over from Sunday dinner. It's just as nice with chicken though. It's a Delia Smith recipe and it's absolutely yummy, made with everything you would find in your store cupboard so there's no need to buy anything.

    I also make big bowls of soup - potato, tomato & Basil etc.

    Rissoles

    Serves 2-3

    Ingredients

    8 oz (225 g) cooked lamb or beef

    1 small onion

    11/2 oz (40 g) fresh breadcrumbs

    1/4 teaspoon ground cinnamon

    2 level tablespoons chopped parsley

    1 clove garlic, crushed

    1 small egg, beaten

    salt and freshly milled black pepper

    For the coating and frying:

    seasoned wholewheat flour

    oil for shallow-frying

    Either mince both the onion and the meat through the finest blade of a mincer, or else chop them finely in a food processor. Then place them in a mixing bowl and add the rest of the ingredients. Now just mix and mix until everything is thoroughly blended.

    Divide the mixture into six portions, and shape each into a round cake shape with your hands. Then coat each rissole all over with some seasoned wholewheat flour.

    All this can be done in advance, and the rissoles can be covered and chilled in the fridge. When you're ready to cook, heat some oil in a frying-pan (just enough to cover the base) and when it's very hot fry the rissoles for 5 minutes on each side.

    Potato Soup

    1 1/2 lbs potatoes

    1 large Onion

    2 Pints stock (chicken or vegetable)

    1 oz butter

    1. Roughly chop the potatoes and onions and saute for 5-10 minutes in the butter

    2. Add the stock and simmer for 20 mins or so until the potatoes are tender.

    3. Blend with a hand blender until smooth.

    Servings : Depends how hungry you are! I usually get 5 or 6 servings out of this recipe which I serve with nice fresh bread

    Cost : about £1.00 although I've always got the ingredients on hand anyway!

    Tomato & Basil Soup

    1 large onion (or 6 shallots) - whichever you've got on hand

    2 cloves crushed garlic

    2 lbs tomatoes (£0.89 in the supermarket)

    1 1/2 pints chicken or vegetable stock (1 Oxo cube will do)

    2 tblsps Olive Oil

    1 1/2 tblsps plain flour

    1 pack fresh Basil (£0.69 in Tescos)

    salt and peper

    2 tblsps tomato puree (£0.24/tube in Tesco)

    1. Chop and saute the onions and garlic in the olive oil until translucent.

    2. Add the flour and stir well. Cook for a minute to cook out the flour.

    3. Slowly add the stock and bring to the boil, stirring all the time to avoid lumps.

    4. When boiling, add the tomato puree and chopped basil and stir in well.

    5. Add the skinned, chopped tomatoes and simmer for 30 minutes.

    6. Blend with a hand blender and season to taste.

    Servings : about 4 good sized bowfuls - each enough to be a meal if served with bread

    Chicken and Pasta Soup

    1 chicken carcase (left over from a roast)

    1 large onion chopped

    1 stick celery chopped

    1 carrot chopped

    1 chicken oxo cube

    salt and pepper

    Handful of pasta shapes - whatever is to hand

    1. Break up the chicken carcase and put it in a pot. Cover with cold wate and add some salt and the stock cube. Bring to the boil, cover and simmer for 30 minutes

    2. Remove the chicken carcase and add the chopped vegetables and some pepper. Simmer for 20 minutes until tender.

    3. Remove the chicken meat from the carcase and return it to the soup with a couple of handfuls of pasta. Simmer until the pasta is soft.

    Turkey Casserole

    1 pack turkey steaks (about £3.00)

    1 onion sliced

    1 carrot sliced

    1 chicken oxo (I'm a bit fan - you can tell can't you?)

    salt and pepper

    Put the steaks, onion and carrot in a casserole dish or slow cooker, cover with water and crumble in the stock cube and add some salt and pepper.

    Cook very slowly (100C in the oven) for about 3 hours until the meat is tender.

    Serve with boiled potatoes and peas.

    Frito Pie In A Bag!!!

    These are so much fun.We use to take them to football games or just an after school snack...

    Split bag of Frito's

    Add some hot beef chili(no noodles)

    sour cream

    chopped onions

    shredded cheddar

    Jalapeno's if desired

    Stir up a little and eat right out of the bag with fork...

    or open bag and lay on plate.

    Just fun and cheap...

    tacos. buy some lettuce, hamburger, cheese, shells, refried beans and sour cream and you can really eat for a week. eat tacos one night have a taco salad for lunch the next day then have either more tacos for dinner or make some barritos. the next day you can have a salad or barritos again. mix it up a little. i really do this about 3 times a month
