Home made potato chip question?

I plan on making some home made chips for the game on Sunday. The thing is I like them warm and think most people will like them warm as well. Is there a way to keep the potoatoes after being cut so I can cook them in batches throughout the game? I have a fryer that maintains a certain heat so I can leave it on for quite a while. Also, I generally just top with salt, any ideas for interesting toppings?

    Cut potatoes should be kept in cold water to keep from oxidizing. Of course, you will need to make sure that they are DRY before putting them into a hot fryer.

    Some other kinds of seasonings can be found on your spice shelf. Chili powder, garlic powder, barbeque spice, Lawry's season salt. Think about what you are having with them and pair them up with similar or complimentary tastes. You could even season them with dry ranch dip mix...

    If you want to keep them warm without cooking them any longer just lay them out on a cookie sheet (paper towel underneath to soak up grease) and put them in a low oven. I would say maybe about 250 degrees should be good.

    yum,, toppings! How about some parmesan cheese and garlic powder. Guy seem to love their garlic. Or for a neat sweet and spicy how about some cumin, cayenne pepper and some sugar~!

    I agree, keep them in cold water. It might just be easier to go ahead and cook them and keep them in an electric skillet on low or a crock pot on warm or low. Youll be cooking in the kitchen the whole time if you wait to cook them. Try other types of potatoes, too. Like the blue ones or sweet potatoes sprinkled with a little brown sugar, yum!

    Malt vinegar is a good sprinkler. Our cafe sells them with pimento cheese for dipping.
