Can you help me make my husband an old fashion Carmel Pie?
My husband is from Tennessee and his favorite Pie is Carmel. His house burned down when he was a teenager and his mother died and no one seems to have the receipe. I am sure it was the old fashion kind made from scratch. But, I am not sure if it is a carmel pie as he remembers or it is a carmel custard. Nevertheless, I will be thankful for all to find the closest one I can get.
I would like to bake this for him for his Valentine's Day present. I know it is difficulty to bring back the taste of our memories but I believe someone has this receipe! Please help! I will be eternally grateful to find one.

Caramel Pie
1 cup sugar, divided
1/4 cup water
1 tbsp flour
1 tbsp cornstarch
1 1/2 cup milk
3 eggs, separated
1/8 tsp salt
1 tsp vanilla
1 tbsp unflavored gelatin
1 tbsp cold water
1 9 inch baked pie crust
Brown 1/2 cup of sugar in a skillet. When dark brown and melted add water. When sugar is dissolved, remove from heat. Mix flour, cornstarch, milk, egg yolks,1/2 cup water, salt and vanilla. Stir into this mixture the caramelized sugar. ook until thick. Add gelatin dissolved in cold water. Cool and pour into pie shell. Use egg white to make meringue

O'Charley's-Like Caramel Pie
2 cans (14 oz. each) sweetened condensed milk
1 tsp. vanilla extract
1 graham cracker crust
8 oz. whipping cream
Sugar to sweeten whipping cream
Remove tops from cans and boil the 2 cans of condensed milk in boiling water for 3 to 4 hours, stirring often. Maintain a water level approximately 3/4 of the way to top of the can. When milk is thoroughly caramelized, remove from the heat and pour into a mixing bowl, scraping all of the milk from the cans. Add vanilla and blend until free of lumps. Pour into a graham cracker crust. Chill for several hours. Top with whipped cream which has been sweetened with a little sugar. Refrigerate until ready to serve and store in the refrigerator.

Two good caramel pies
Recipe from Betty Hodge, Moore's Chapel, TN
2 cups sugar
2 cups milk (I use skim)
1/3 cup flour
Pinch of salt
6 egg yolks
2 cups sugar
Mix together above ingredients, and bring to a slow boil. Meanwhile, melt 2 cups sugar, stirring until caramelized. Add caramelized sugar to above mixture, and cook until thick.
Prepare meringue, and add to top of filling in two baked pie crusts. Bake from 5 to 10 minutes at 350 degrees.
Bear Hollow Caramel Pie
Smokey Mountain Cookbook
1 cup packed brown sugar
1/2 cup sugar
2 tsp all-purpose flour
2 tsp cornmeal
3 egg yolks
2 cups milk
1/4 cup margarine
1 9" baked pie shell
In a saucepan combine the brown sugar, sugar, flour, cornmeal, egg yolks, milk, and margarine. Cook until thick (about 25 to 30 minutes). Pour the filling into the baked pie crust.
Meringue Topping:
Combine 3 egg whites and 6 tablespoons sugar. Beat until fluffy. Spread over pie and broil in oven until brown on top.

Old-Fashioned Caramel Pie
Ingredients:
1/2 c Sugar
1/4 c Water
1 3/4 c Milk
1/4 c Karo corn syrup
4 tb Cornstarch
1/4 c Milk
1/2 c Sugar
1/4 ts Salt
2 Egg yolks; beaten
2 tb Butter
1 ts Vanilla
1 9-inch pie shell; baked
Instructions:
----------------------------------MERINGUE----------------------------------
3 Egg whites
3 -(up to)
6 tb Sugar
In a saucepan on low heat, melt 1/2 cup sugar with the water, stirring,
until the sugar dissolves. Set aside.
Combine in a pan the milk and corn syrup. Heat. While heating, in a bowl,
combine the cornstarch with 1/4 cup milk. Stir until smooth, then add in
1/2 cup sugar, salt and egg yolks. Mix well and add to the scalded
milk-syrup mixture and cook until thickened. Add in the caramelized sugar.
Cook on low heat for 5 minutes, stirring constantly. Add in butter and
vanilla. Pour into a 9-inch baked pie shell. Top with meringue. Bake at 400
degrees for 8-10 minutes or until browned.

you may try searching online if you have not already. allrecipes.com, cooks.com, or do a google search. I am sure you are going to have to use several recipes and modify them to make it right!! Sounds like a great challenge and I am sure your hubby will like taste testing along the way!

O'Charley's Carmel Pie
Ingredients:
1 large Graham Cracker Pie Crust
2 cans sweetened consensed milk
1 small container Cool Whip
1 small pkg. chopped pecans
1 package Nestlé's mini chocolate chips
Directions:
Peel paper from cans of Eagle Brand Milk. Place cans on their sides in a large pot and cover completely in cold water. Slowly bring pot to rolling boil and boil for 3 hours making sure to turn cans every 30 minutes or so. ***
At the end of 3 hrs allow cans to cool for 1 hr. (at least - this part is VERY important). Open cans of Milk and spread into pie pan. Cover with Cool Whip. Sprinkle nuts and chocolate chips all over the top. Refrigerate for 8 hrs. DELICOUS.
***This can be dangerous so be sure you never leave cans boiling on the stove without checking them
CARAMEL PECAN TURTLE PIE
1 bag (14 oz.) vanilla caramels
1/2 c. butter
1/2 c. heavy whipping cream
2 c. pecan halves, toasted
1 chocolate graham cracker pie crust
TOPPING:
1/3 c. chocolate chips
2 tbsp. butter
2 tbsp. heavy whipping cream
2 tbsp. light corn syrup
1/2 tsp. vanilla
For decoration: 1 cup heavy whipping cream, whipped to soft peaks.
Filling:
1. Put caramels, butter and cream in a medium size saucepan. Cook over low heat, stirring often with a whisk until caramels and butter melt. Remove from heat and whisk until completely smooth. Stir in pecans.
2. Pour into pie crust. Cover with plastic lid and chill 3-4 hours until cooled and firm.
3. Topping: Stir chocolate chips and butter in a small saucepan over low heat until melted and smooth. Remove from heat and stir in cream, corn syrup and vanilla until blended. Pour over pie. Chill at least 1 hour.
4. Just before serving, decorate tops with dollops of whipping cream.
COCONUT CARAMEL PIE
1/4 c. butter
1 (7 oz.) pkg. coconut
1/2 c. pecans
1 (8 oz.) pkg. cream cheese
1 (12 oz.) can evaporated milk
1 (16 oz.) carton whipped topping
2 (9-inch) regular pie crusts, baked
1 (12 oz.) jar caramel topping
Melt butter; add coconut and pecans. Cook until brown. Set aside. Combine cream cheese and evaporated milk. Beat until smooth. Fold in whipped topping. Layer half of cheese mixture, half of caramel topping and half of coconut mixture. Repeat layers for other pie. Cover and freeze.
