Rice Salad anyone?

Could you give me your best Rice Salad recipes? I have a bunch of cooked brown rice.

    I haven't really heard of this before, however it sounds like it could be really good and a welcome change to the traditional potato and macaroni salad, anything with recipes please post!! Good Luck and Happy Feasting!!

    I found this recipe at grouprecipe.com, I NEVER EVER post recipes that other people create I always share my own personal recipes, however since I have never made this so I made an exception, and it interested me as well I thought I would browse around a bit to find a helpful recipe for the both of us to try. I am going to try this tomorrow, I hope you do too!!! ( I hate mayo, so this recipe doesn't have any.)

    4 Tbsp balsamic or red wine vinegar

    2 garlic cloves, slightly crushed

    2 Tbsp chopped fresh thyme

    Freshly ground black pepper

    1 tsp salt

    1 1/2 cups jasmine or basmati rice, cooked

    1/2 cup asparagus, tough ends removed, chopped, blanched

    1 smoked pork chop

    1/3 cup chopped green onions

    Directions

    Combine the vinegar, garlic, thyme, pepper, and salt. Let stand 1-2 hours or more. Remove garlic.

    Pan fry the pork chop so that it develops a little carmelization/becomes a little brown. Cut into small pieces when it's cool enough to handle.

    Toss the rice, asparagus, pork chop and onions with the dressing. Season to taste with additional black pepper as desired.

    Serve at room temperature.

    ( or I am sure serving it cold would be good too, you can even bring it for picnics, it will keep well) Good luck!!

    Brown Rice Salad with Apples and Walnuts

    1 c Brown or long grain rice

    2 1/2 c Water

    1 tb Vegetable oil

    1/4 ts Salt

    1 c Walnuts; coarsely chopped

    1 Celery rib; sliced

    4 Scallions; thinly sliced

    1 c Raisins

    1 md Red apple; diced

    1 Grated rind 1 lemon

    3 tb Fresh lemon juice

    2 Garlic cloves; pressed

    1/4 ts Salt

    Fresh black pepper to taste

    1/3 c Olive oil

    Instructions:

    Put Rice in medium sauce pan along with water, oil, and salt. Cover, bring

    to a boil, and reduce the heat to simmer. Cook for 45 minutes or until the

    rice is tender and all the water has been absorbed. Meanwhile, combine the

    walnuts, celery, scallions, raisins, apples, and lemons rind in a large

    bowl. In a jar with a tight-fitting lid, combine the lemon juice, garlic,

    salt, pepper, and olive oil and shake well. Pour half of this dressing on

    the apple mixture and toss well. When the rice is done, let cool until just

    warm. Combine with the fruit fruit mixture and pour on the remaining

    dressing. Let sit at least 1 hour before serving at room temperature.

    I make mine just like potato salad except with rice.

    My wife does one with brown rice, garbanzo beans, red bell pepper, pinenuts, curry powder, and I think a honey and olive oil dressing.

    wow, never heard of rice salad ........ I made rice pudding yesterday, tho. It was delish!
