First off Chili freezes well if you're not in the mood for anymore right now. But it tastes great on top of a baked potato with cheese and sour cream and all the other usual toppings. The obvious is top a hot dog with it. You can make a Frito Pie (if not from the south you may be unfamiliar with that - its Frito's topped with chili and cheese and onions and jalapenos). Ok so there are some options......mmmmmm

There are so many things you can do with leftover chili. I'll give you a few hints. Hope you find something you like.

    1. Heat chili, add a packet of Taco seasoning, cook a box of Macaroni & Cheese, add this to the chili. Next place in bowls and top with crushed (not too fine) Tostitos. Stir and enjoy.

    2. Cook a few potatoes, celery and carrots in the same pot, drain and add to chili. Makes a good stew.

    3. Thicken the juice, bake some potatoes, top with chili, sour cream and shredded cheese.

    4. Cook some noodles, thicken the juice of the chili, top with sauteed mushrooms, bell pepper & onions.

    5. Just freeze it for another time! That's what I do. Then you don't have to cook.

I always make super huge batches of chili to do other things with them. I actually have some leftover chili in my oven right now with a few slices of pepperjack cheese melting on top of it for a nice kick.

Here are some of my ideas:

You could make some killer chili nachos.

Chili Cheese Fries & Hot Dogs with Chili

You could also pour it in a casserole dish and pour a cornbread batter & cheese on top of it, and bake it until the cornbread layer is cooked through.

Another idea is a mexican salad - with salsa, chili, and corn chips on top.

And one more for you - you can make Sloppy Joes with them. Just pile the chili up on hamburger buns and top with cheese if desired.

Make a batch of cornbread, put the chili in a casserole or skillet throw the cornbread over the top and bake. Kind of a cowboy casserole. My family loves it. You would want to bake at about 325 for about 30 mins or until the cornbread is done. Hope this helps.

Make chili dogs. Or if you have a freezor just place in air tight containers and freeze and next time you get a craving for a bowl of Chili you have it there all you have to do is grab a pack of crackers.

Use it as a filling for burritos. Spoon some salsa over top, sprinkle w/ cheese & bake until the cheese is melted.

    Eat it over spaghetti noodles.

Spoon a little over scrambled eggs, or use as a filling for omelettes.

Dice up potatoes, mix it with the chili, and make a southwestern hash.

    It also freezes very well.

Make nachos, chili dogs, freeze it, my sister gave me this casserole......

    1 package hotdogs

    1 package hotdog buns

    1 bag shredded cheddar cheese

    chili

    9 x 13 pam

    pam

Spray the pan with pam, tear up the buns into bite size pieces and spread on bottom of pan, slice hot dogs and sprinkle over it, top with chili and cheese (onions if you want)...bake at 350 for 30 minutes...

You could always use it as a starter for vegetable soup. That is what I usually do. I added a couple of cans of mixed vegetables, a can of diced tomatoes and any other vegetables I have leftover in the fridge. I then make cornbread to go with it and it is a whole other meal.

My niece makes a good toss salad; heats up the chili and pours over the big salad.
