pomegranate ketchup?

I am looking for a pomegranate ketchup recipe... anyone has one gets a 10pts.

    Hey, I am sorry, I haven't tried this one but it is supposed to be really good!

    POMEGRANATE KETCHUP

    Ingredients

    1 cup white vinegar

    1 1/2 cinnamon sticks, broken

    1 1/2 teaspoons whole cloves

    1 teaspoon celery seeds

    24 medium sized pomegranates

    1 medium onion, chopped(1/2 cup)

    1/4 teaspoon cayenne

    1 cup sugar

    1/4 teaspoon salt

    Directions

    1 Mix the first 4 ingredients in a saucepan.

    2 Cover and bring to boil.

    3 Remove from heat and let stand.

    4 Mash the pomegranates then sieve to get rid of seeds

    5 Drain in a colander, discarding liquid.

    6 Place pomegranate pulp in a large pot.

    7 Add onion and cayenne.

    8 Bring to boiling.

    9 Cook for 15 minutes, stirring often.

    10 Put mixture through a food mill; discard seeds and skins.

    11 Add sugar to the pomegranate "juice".

    12 Bring to boil and simmer for 1 1/2 to 2 hours or until reduced by half.

    13 (measure depth with a ruler from start to finish) Strain vinegar mixture into pomegranates, discarding spices.

    14 Add salt.

    15 simmer for about 30 minutes or until it reaches desired consistency, stirring often.

    16 Water Bath Canning-------------.

    17 Prepare ketchup as above.

    18 Pour hot ketchup into hot, clean pint jars, leaving a 1/2 inch head space.

    19 Wipe jar rims clean.

    20 Adjust lids.

    21 Process in boiling water bath for 10 minutes (start timing when water boils).

    I haven't made it, but here's my advice. Start with some pomegranate juice. Make sure you're getting the plain kind and not something with green tea, or blueberry, as that might turn out odd. Pour some in a saucepan and let it reduce over medium-high heat until it turns into a syrup. I'd try to make a substantial amount of this- I assume you want a strong pomegranate flavor in the ketchup, and tomato will overpower the pomegranate.

    You could start with fresh tomatoes, or canned tomatoes, but that will be really tedious, as you'll have to reduce the result down to a paste. I'd start with tomato sauce and tomato paste- a good Italian canned variety. First start with the paste and add your pomegranate reduction, then adjust the consistency and flavor with the tomato sauce. You may not need or want to add sugar, since the pomegranate syrup will be fairly sweet at this point. I wouldn't add vinegar, for that matter, because the pomegranate will add a tart flavor.

    I recommend dividing the ketchup at this point so you can experiment with herbs. I think a little ground tarragon might be delicious, but I'd try other things as well.

    Oh, and btw- I read the recipe above- 24 fresh pomegranates are going to be ridiculously expensive.

    First Recipe:

    3 cups ketchup

    1/2 small yellow onion, minced

    2 tablespoons pomegranate molasses

    1 chipotle chile in adobo sauce, minced

    1 tablespoon adobo sauce

    1 teaspoon sugar

    Second Recipe:

    2 tb Vegetable Oil

    1 lg Garlic Clove; Crushed

    1 tb Mince Fresh Ginger

    1 md Onion; Finely Chopped

    2 pt Pomergranates

    1 c Fresh Tomato; Peeled, Seeded

    -And Chopped

    2 lg Purple Plums, Pitted And

    -Chopped

    1/4 c Dark Brown Sugar; Firmly

    -Packed

    1 tb Pomergranate Or Raspberry

    -Vinegar

    1 tb Fresh Lemon Juice

    Zest Of 1 Lemon; Cut Into

    -Julienne Strips

    1 md Dried Chili Pepper; Crumbled

    1 ts Ground Cinnamon

    1 ts Ground Cardamom

    1 ts Ground Coriander

    1 ts Salt

    1 ts Freshly Ground Mixed

    -Peppercorns; White, Green

    -Red And Black

    don't have an exact recipe but go and get some vine ripened tomatoes even a canned variety would be fine..process them in a blender..add vinegar and sugar to the pot and the blended tomatoes...then add some POM its a brand of pomegranate juice. maybe just a cap or two full. It would be interesting and certainly packed with tons of lycopene
