Birthday treat for lactose intolerant friend?

My friend's birthday is coming up and I just found out he's lactose intolerant. If I can't find a cake that's suitable, what are some good lactose-free alternatives?

    Hi Melody

I am relatively new to the things surrounding foods and sensitivities/allergies. In the past year I have been playing around with recipies for corn, wheat, and gluten sensitivities.

However, I have not played with dairy allergies - I have just had to avoid dairy or suffer the consequences of eating it.

May I suggest a few places to look?

I would start with your local Food Coop or maybe World Foods grocery. They offer many foods for those who have sensitivities. I love the foods put out by Pamela - you would never know they were made for those who were allergic to gluten. Arrowhead Mills makes products as well but they are drier and a little more flat. ((although if you add stuff to the cookies like craisens and nuts they turn out pretty yummy))

There are cookbooks out there that the recipies are tailored for specific allergies. I would suggest trying an internet search for a few good recipies - just type in lactose free recipies into your favorite search engine.

Some will sugest going vegan for a recipie.

www.about.com (recipies for custards, puddings, & mouses as well as ice cream, )

If you're in a warm part of the world, I would try making a fruit salad or fruit smoothie - I use frozen berries (organic as the red flesh hold more pesticides), sorbet (lactose free), and when I want it creamy, I add some vanilla soy pr rice milk ((I think the rice milk is sweeter and not so overpowering but its starchier in taste))

Your public library might have a few books you can look at and copy a few recipies from.

Also for your information (and mine too - as I had to do some research here )

if you see the words KOSHER or PARVE on an item you can know that the item is meat and dairy free.

Remove from heat, and set aside. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a medium bowl, cream the shortening and sugar together. Beat in the eggs, one at a time, and 2 teaspoons of vanilla. Sift together the flour, baking soda, and salt; stir into the creamed mixture. Drain the raisins and stir them into the mixture. Put the 3 tablespoons of sugar into a small bowl. Roll the dough into walnut sized balls and roll the balls in the sugar. Place cookies 2 inches apart on the prepared cookie sheet. Bake for 8 to 10 minutes, cookies should be firm. The suggestion is to use currants and to dip the cookie in sugar after baking - they supposedly melt in the mouth - PEANUT and LACTOSE FREE - http://kidshealth.org/kid/recipes/index.html -this site has some fun recipies that you can alter or take as is. I took two down and will use them for my pajama party tonight! LOL FRUIT KABOBS Ingredients: 1 apple 1 banana 1/3 c. red seedless grapes 1/3 c. green seedless grapes 2/3 cup pineapple chunks 1 cup nonfat yogurt -- use soy or rice yogurt 1/4 c. dried coconut, shredded Utensils: knife (You'll need help from your adult assistant.) 2 wooden skewer sticks large plate Directions: Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it's fresh. Put the fruit onto a large plate. Spread coconut onto another large plate. Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end. Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut. Repeat these steps with another skewer. Serves Hey Melody - would you let me know what you end up doing and how it goes? Thanks

You can have or make cakes out of dairy free products. Alternative milks include soy, rice and arrow root/corn syrup derivatives of some sort. For further reference, some times lactose intolerance is just a symptom of the body not recognizing the milk product as food. In other words, the solution may be to just use whole milk.

Tuffutti makes ice cream sandwiches that taste like the real thing and they are lactose free! Trader Joes has them, as does a lot of supermarkets.

Try looking for a vegan cake. Also, he may do just fine with taking a Lactaid pill, depends on the severity of his allergy.
