1 cup Arborio rice
3 cups vanilla soy milk
1/4 cup sugar
Pinch salt
1 cinnamon stick
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon, plus more for dusting
1/4 teaspoon ground nutmeg
2 tablespoons plus 2 teaspoons sweetened condensed milk
Preheat the oven to 375 degrees F.
Bring the water to a boil in a medium sized, heavy, ovenproof saucepan. Add the rice, cover, and simmer for 20 minutes, until rice is nearly cooked. In a large bowl, whisk the soymilk, sugar, and salt. When the rice is cooked and still hot, add the soymilk mixture and cinnamon stick. Cover, place in the oven and cook for 45 minutes.
Remove from the oven, uncover, and remove the cinnamon stick. Stir in the vanilla, cinnamon and nutmeg. Pudding will be slightly liquidy; the liquid will continue to absorb into the rice and thicken as the pudding cools. Distribute among 8 bowls, drizzle each with 1 teaspoon of the condensed milk. Dust with cinnamon and nutmeg, if desired. Serve warm or at room temperature.

1/3 cup (75 mL) granulated sugar

1 tsp (5 mL) cornstarch
•
5 cups (1.25 L) milk
•
1/3 cup (75 mL) raisins, optional -You Dont Have To Use*
•
2 egg yolks, optional
•
1 tsp (5 mL) vanilla
•
1 tbsp (15 mL) ground cinnamon
Preparation
1. Place rice and boiling water in a large saucepan. Bring to a boil. Reduce heat and cook gently, covered, for 8 to 10 minutes, or until rice has absorbed water.
2. Meanwhile, in a small bowl, combine sugar and cornstarch. Whisk in 1 cup (250 mL) milk. Add mixture to rice along with remaining milk. Add raisins if using.
3. Bring pudding to a boil. Partially cover and cook gently for 45 to 60 minutes, stirring occasionally, until very creamy and thick. (If the heat is too low the pudding will take forever to thicken, but if it is too high it will boil over. It is best to stay on the low side, but I promise it will thicken eventually.)
4. Stir in egg yolks if using. Cook gently for 1 minute. Stir in vanilla. Transfer to a serving bowl or individual bowls and dust with cinnamon.
Makes 8 servings.

3/4 cup uncooked white (basmati) rice
2 cups milk, divided
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
1 tablespoon butter
1/2 teaspoon vanilla extract
DIRECTIONS
In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk and beaten egg. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
When I made this, I omitted the egg because I didn't have any. Still came out good. Sprinkle cinnammon all over it, hope that helped!

As an alternative to Delia's version, consider using brown sugar or adding a vanilla pod (vanilla extract will work just as well). Some also suggest adding cinnamon or cardamom pods - I've never tried either, but they both sound delicious.

I have a simple, but delicious recipe for rice pudding. I like it because you just mix the ingredients and bake...no stovetop invovled:
Homemade Rice Pudding
2 cups milk (2% or whole)
2 eggs, beaten
1/2 cup sugar
1 tsp. vanilla
dash of salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2/3 cup uncooked rice
Directions
Pre-heat oven to 325 degrees.
Mix milk, eggs, sugar, vanilla, and salt in a bowl. Pour into a round baking dish (8" or 9"), add uncooked rice, and stir.
Pour an inch-deep layer of water into a second, slightly bigger round baking dish. Place rice pudding dish into bigger dish and bake for about 1 1/2 hours.

P.S If you want to add raisins, you use 1/4 - 1/2 cup.

The first one uses raw rice; the second uses cooked (leftover!) rice.
Creamy Coconut Rice Pudding with Rum Whipped Cream
2 c. milk
1 can Coconut Milk
1-1/2 c. water
1-1/2 c. raw Jasmine Rice
2 cinnamon sticks
Dash freshly ground nutmeg
1 c. sugar
2 tsp. pure vanilla extract
5 tabl. shredded coconut
Combine all the ingredients except the pure vanilla extract in a medium size pot. Bring to a boil over medium head mixing constantly. Lower to a simmer and cook for approximately 1 to 1-1/2 hours mixing frequently until the pudding thickens. Remove from heat and stir in vanilla and coconut.
Topping:
1 pint fresh whipping cream
2 tbls. sugar
Splash of light rum.
Place all ingredients in a bowl and mix on high until stiff peaks form. Place warm coconut pudding in serving bowl and top with rum flavored whipped cream.
