How do you make a real italian meatball grinder?
I grew up in Baltimore, and one of the things I love about the east coast is the great sandwiches you can get from Philadelphia, New Jersey and New York. Anyone have a recipie for a real Italian meatball grinder (or hoagie or submarine sandwhich), like the kind you get back east? Specificially, I'm wondering if I should use provolone or Mozerella cheese?

3 Italian Meatballs
1/4 cup Basic Tomato Sauce
1 hoagie roll, about 6 inches long
2 ounces fresh mozzarella, thinly sliced
Heat the broiler to low and arrange the rack in the middle of the oven. Warm up the meatballs in the sauce in a covered microwaveable bowl or on the stovetop.
Cut a 1-inch V-shaped notch out of the top of the hoagie roll and discard. Remove enough of the roll’s interior so the meatballs can fit easily.
Arrange the meatballs in the roll, cover with sauce, top with mozzarella, and put on a foil-lined baking sheet.
Place under the heated broiler until cheese is melty and golden and bread is toasty around the edges, about 3 to 4 minutes.

lets start with the sauce -
saute yr garlic, then add 1 lg can of whole tomatoes, basil, bay leave, salt n pepper n about 2 tsps of sugar.
meatballs - 1lb hamburg, 1 egg, 1/2 c bread crumbs, parsley, salt n pepper n romano or parm cheese, for extra moist meatballs 1/4 c warm water.
once yr sauce is started n yr meatballs are browned - let the meatballs finish cooking in the sauce. allow about 2 hrs for this.
find a good bread - add meatballs, top with both mozz n provolone. if u want the grinder sandwich put in oven til cheese melts.

I'm from Buffalo and Italian recipes there are the best. Use a good italian bread. If possible, make your own! Also... MAKE YOUR OWN SAUCE! Nothing store bought is the same. If possible, get your favorite Italian friend to give you a jar of their sauce. (My Mom gives a jar of her sauce to everyone that comes for dinner). Make and cook your meatballs the way you'd like to. Use both mozerella and provolone! Mmm. I always found it the best with leftover meatballs from dinner the night or two before.
