how do i get crispy potatoes from cast iron skillet?

can anyone tell me how to get crispy potatoe slices fried in a cast iron skillet? i either heat the skillet, put in shortening, getting limp, greasy potatoes, or i flash fry the potatoes and the fire alarm goes off. HELP

    You have to have patience cooking fried potatoes....after you add the oil to the heated skillet, start layering the potatoes on. (I add sliced onions and season them now). Turn the heat down just a tad and cover the skillet. Check on them by taking a spatula to lift them up a tad to see if they've browned any. If not, cover and continue cooking, checking more often so you don't burn them. If you stir them or turn too early, they will be a greasy mess.

    Try to turn them all in one swift turn and continue cooking that side the same way until crisp.

    Heat the pan before adding oil (vegetable or peanut) then allow the oil to heat before adding the potatoes 1 layer at a time (about 10-12 slices) allow to crisp then transfer to a paper lined plate to drain and repeat. Good Luck!

    heat your skillet with a small amount of grease or oil, the add THIN sliced potatoes, cook slow and turn, good spuds require patience my man

    vegetable oil. make sure not to fill it too full since oil expands when heated. but you won't need but maybe 1-2 tbsp.

    you could also try a coating for the potatoes like a flour,and a seasoning,

    i would flash fry the potatoes and try to keep a vent on so the alarm doesn't go off. its crispier that way.
