The easiest way to a fluffy cake if you don't have a baking background is to get a store bought cake mix and substitute apple sauce for oil - I know it sounds crazy but it works - cuts the fat and keeps your cake from being heavy and flat.

Maybe even an angel food cake?

The key is actually to have the egg whites folded into the cake, so look for recipes of that nature. Here's one for a fluffy cake.

    Fluffy Yellow Cake

    Ingredients:

    1 c. butter or margarine

    2 c. sugar

    4 eggs, separated

    3 c. flour

    3 t. baking powder

    ¼ t. salt

    1 c. milk

    1 t. vanilla (I substituted almond extract)

    Directions:

Separate egg whites from yolks. Beat egg whites until stiff (peaks form). Set aside. Cream butter and sugar well. Add egg yolks. Add dry ingredients to flour. Add flour and milk alternately. Add vanilla (or almond extract). Fold in egg whites. Pour into 3 greased and floured cake pans or 1 bundt. Bake degrees for 30 minutes (in 3 pans) or 45-50 minutes (in Bundt).

well the best thing you can do is to sift all the dry ingredients and THEN measure them out. It become a lot lighter and fluffier when you sift, then measure. Not too many ingredients, this recipe is really good.
