I would make a modified red beans and rice. Just mix the kidney beans and tomatoes together in a pan and heat.. if you have some seasonings (especially chili powder) season it. Then pour over cooked rice. It would be better if you could add some chili powder and onions to the beans & tomatoes!

Check out www.allrecipes.com. You can search recipes by ingredients.

From what you have I could make a few meals.

    1. Dice and fry half the potatoe and scramble an egg with it.

    2. Mexican rice: Saute 1 c. rice w/ 1tsp of oil. Stir constantly til light brown. If you have any onion and garlic, mince it and throw it in at this point. Add about 1/2 C. of tomatoe puree or chopped tomatoes. Stir and immediately add about 2 C of water with an OXO cube dissolved. Bring it to a boil, then bring it down to a medium heat. Take 1 hard boiled egg, slice it into wedges and place it on top of the rice once the water level is about 1/2 inch from the top of the rice. Let the rice continue to cook until fluffy.

    3. Throw the kidney beans into a pot, add some chopped tomatoes, a few spoons of ketchup and a few Tbsp of gravy powder... kinda like a chili. serve over rice that has been steamed in broth from the oxo.

    Good luck
