Coolers to keep things cold in....we usually freeze water in 1/2 gal.milk jugs to make ice for the coolers. Plus you then have water from your own tap at home to drink as the ice thaws. Also we usually freeze most meats we take with. They act as ice blocks also and will thaw for using. If you plan to grill hamburgers or hotdogs, freeze them seperately into patties and servings. They'll thaw easier for use.
Our kids loved making "hobo packs" (2x Foil wrapped sliced potatoes, hamburger, sliced carrots/celery/onion, with a bit of seasonings and a touch of oil. Cooked over the grill or campfire but need to be watched and turned several times to avoid burning. Ther are lots of websites for recipes for camping also to check out......have fun! Oh also..plan ahead in case of rainy weather and have things to do..cards, checkers, domino's etc.

2 days should be a cinch. First of all coolers and lots of ice to keep everything cold. Cooking is pretty easy over all too. One of the best ways to make some good food, is to use a dutch oven. A dutch oven is a very heavy cast iron skillet usually with a lid. They are kinda spendy so don't go and buy one unless you plan on using it often. See if anyone you know has one or 2 you can borrow they really are great. Also those grill baskets are great
Meal ideas:
Hot dogs and hamburgers of course
Can of baked beans
Fish (if you catch your own or bring some frozen filets, or whole fish thawed)
Potatoes (baked in the coals, or sliced up with bell peppers and bacon if youhave a dutch oven.)
Corn on the cob
Chicken (in a basket, on the cooking grate, or in a dutch oven-use b-b-q sause, lemon and garlic, and just season with your fav flavors) You could also marinte chicken and seal it up twice in 2 zip top baggies.

I've always found that bagging up everything I was going to eat one of the easiest and most helpful tip I can offer.
Having an ice chest for drinks and a separate one for food, helps keep food colder and ice last longer.
Take sandwiches or cheese and cracker type food for the first meal.... everyone will be hungry and your site won't be ready before hunger strikes.
Some different things to cook would be campfire chile.. brown hamburger and onions add a smal can of tomato sauce and beans..
Make hobo packets. make hambuger patties, add thin slices of potatoes, onions carrots and seal them in foil packets. You can make these up in advance and freeze if need be. The you can just toss them on the grill.
For breakfast.. I usually make breakfast tacos, but you could make pancakes and have the batter flour in a zip loc and just add water to it.
Make up individual packets of coccoa with marshmallows so all you have to do is heat the water and pour it all n a cup.
Make each person responsible for keeping there cups, utensils and plate clean and stored. Take off your shoes before entering the tent. Take some rop so you can make a clothes line. Hang your towel to dry. Bring lots of water, to drink and to cook and clean with. Better to have to much than not enough.
Hope these are some helpful tips for you .. Have fun.
EDIT* I just thought of something else... make up grilling sticks before you go.. either by stripping some thin braches or clipping some wire hangers.

Pack an ice chest with your cold stuff like butter, mayo, lunch meat, hot dogs, hamburger meat, produce, eggs, etc. & a bag of ice. Pack your bread, buns, chips, crackers, peanut butter, cookies, etc. in another ice chest or bags without ice. Have one large ice chest full of enough bagged ice for two days. You might need more than one chest, depending on the size of the ice chest. You can put your drinks on ice or not. Bring a little BBQ pit & charcoal & paper plates, a pot & fry pan, eating utensils & spatula, etc. & large garbage bags, paper towels, toilet paper, soap & jugs of water. Don't forget to bring bath towels & hand towels or rags & some small plastic left over grocery bags. Probably need some bug spray too & cots or sleeping bags & blankets & a radio, don't forget the pillows. Sounds like fun. Bring an axe too, you might want to make a fire, marshmallows, etc. Hope the weather is good! Bring matches & lighters & flashlights, Coleman lanterns, etc. Don't forget the First Aid Kit. I'm sure I forgot something. Make a check list if you have to. Be careful.

Get some dry ice.. Keep the kids away from it as it burns.
Take along some frozen apple pies. (doesnt matter if they defrost) Cook them in the camp oven. Add some caned cream. Yummmm
