What can I do with my meat?

I have a pound of ground pork and a pound of ground lamb I just brought home from the store. What should I make?

It could be two different recipes or one recipe using both meats.

I also have two pounds of hamburger meat that I need creative ideas for.

    RECIPE WITH BOTH MEAT - Manx Version Lancashire Hotpot

    Ingredients

    * 8 lamb chops or 2 lbs cubed beef (stewing beef is good)

    * 4 lamb cored (Optional)

    * 2 lalrge onions, peeled and sliced

    * 2 cups lamb or beef stock

    * 1tsp dried mixed herbs

    * 1tsp dried rosemary

    * 1 1/2 lbs white potatoes,thinly sliced

    * 4Tbsp butter

    * Salt and pepper

    Directions

    1. Preheat oven to 350F/180C/Gas Mark 5

    2. Butter a deep oven casserole dish (you have a dish make sure it's with a tight fitting lid) and line the bottom with potato slices. Season with salt and pepper.

    3. Arrange half the chops or beef, and lamb (if used), and cover with a layer of onions.

    4. Cover with more potatoes.

    5. Repeat the steps until you have used all the meat , onions and potatoes, finishing with the potatoes.

    6. Pour in the stock, herbs and rosemary.

    7. Cover with a buttered piece of baking parchment and put on a tightly fitting lid.

    8. Bake for 2 hours, then remove the lid and paper.

    9. Dot with more butter and bake for another 30 minutes.

    10. Serve with red pickled cabbage and crusty bread rolls.

    FOR HAMBURGER MEAT

    RECIPE - 1 Healthier Spaghetti

    Ingredients

    * 1 box thin spaghetti wheat noodles

    * 1 pound very lean ground hamburger meat

    * 1 pound italian seasoned ground turkey meat

    * 1 medium onion (diced)

    * 1 green bell pepper (diced)

    * 4 to 5 mushrooms (sliced)

    * 1 big jar or two reg jars chunky veg. Prego

    Directions

    1. cook wheat spaghetti noodles as directed on the box

    2. drain and set aside

    3. In medium sized sauce pan combine lean hamburger meat, turkey meat, onions, bell peppers, and mushrooms

    4. cook on medium heat until meats are browned and cooked through

    5. drain

    6. return to stove top and add Prego sauce to ingredients

    7. cook on medium to low heat (stirring occasionally) until sauce is hot and bubbly

    8. turn off heat, and combine noodles and meat/sauce mixture

    RECIPE - 2 Babas Meatballs Meatloaf Hamburgers Or Salisbury Steaks

    Ingredients

    * 5 pounds ground meat

    * Onions, finely cut (really good when puree them keeps meat moist)

    * Celery, ½ stalk, cut very finely (I don’t add this to my meatballs only meatloaf and hamburger and salisbury steaks)

    * Garlic, about 4 or powder or garlic salt

    * Pepper & Salt

    * 2 eggs, beaten

    * 3 - 4 white bread soaked in milk or ( I now use 1 cup seasoned bread crumbs add milk to mix)

    * Parsley add a good amount be generous

    Directions

    1. Meatballs:

    2. Mix all and roll in additional bread crumbs(makes them crispy) and fry in pan or bake @ 350 till done I prefer the fry method for meatballs. I do not cook them all the way. I add it to my sauce after they just brown and let it cook in my sauce.

    3. Hamburger patties:

    4. Make patties for hamburgers dip into more breadcrumbs for crunchy outside and fry.

    5. Salisbury Steak:

    6. Make salisbury steaks with mushroom sauce. (I cheat at times and brown up the crumbs in the skillet. Add mushroom soup. I also add mushrooms I saute in butter.

    7. Meatloaf :

    8. place in baking pan with little bit of water and oil on bottom. Cook it for about hour half 2 hours (sometimes 2.5 check it).

    9. Or drain some of the juices and Last fifteen minutes top with this sauce...3/4 cup ketchup, 3/4 cup brown sugar, worshershire sauce to taste. Place on meatloaf and bake last 15 minutes. Like BBQ sauce.. delicious. Or again I saute mushrooms in butter and add mushroom gravy and parsley and pour over top of meatloaf or serve on the side

    10. rule of thumb: per 5 pounds of meat only use 2 eggs. eggs will make meat tough

    The recipe I see most often is for meatloaf, using ground lamb, beef, and pork. If I could find ground lamb around here I'd give it a shot in a heartbeat.

    When i was a kid growing up in Louisville, KY there was a butcher in a market up the street from my house and he would combine these three ground meats and take a small handfull of it and mold it around a shish ka' bob stick, and we would bring them home and saute them in butter, and serve them with vegetables for dinner for us kids.

    He called it "City Chicken".

    He was an Italian expatriate that came here before WWII to escape the Mussolini dictatorship, and he named his market "Victory Food Market" in hope that the U S Army would free his homeland so he could bring his family here. They did and he did.

    for the ground pork....

    saute pork with onions,garlic,tomato (2onions 5 cloves garlic should be minced,2 tomatoes in cubes)

    add bell peper (doesent need to be red ,green or yellow chop into strips)

    add 2 potates (peeled and chop into small cubes)

    add salt and pepper to taste

    add 1/2 cup of water and let it simmer for a while until the liquid reduce for a bit

    add 1 can of tomato sauce....

    just let it simmer at low heat w8 for the tomatoes and meat to be tender... once done its ready to server! im telling you its really yummy!

    chinese dumplings will take a mix of pork and lamb ground. add blue cheese and mustard powder to the ground beef and make some killer burgers.

    here's a recipe for your ground lamb- its a moroccan dish okay?

    you'll need:

    -ground lamb

    -finelly chopped spring onions

    -1/2 tbsp cinnamon

    -1 tbsp allspice

    -1 tsp salt

    -1 egg

    -3 tbsp semolina

    mix all together, make tiny balls, and fry till brown. serve with youghurt and warm pita bread with a side dish of green fatoush ( a salad mix of lettuce, chopped spring onions*fine, avocado, seeded, sliced green chilies, solantro chopped, chopped mint, chopped coriander, and pieces of toasted bread. dress it with zest of 1 lime, juice of 1 lime, 1 tsp salt and 3 tbsp olive oil)

    here's the recipe for ur ground pork- a thai street food/ appetizer.

    u'll need-

    -ground pork

    -1 egg

    -chopped coriander

    -lots of chopped garlic

    -finely slice lime leaves

    mix altogether, and place the mixture on pices of bread, then fry in deep oil till brown n drain all th excess oil.

    here's a recipe for ur hamburger meat-

    -hamburger meat, mushed

    -potato mashed

    -salt

    -pepper

    -egg (to make everything sticks together)

    -chopped spring onion

    mix altogether, and shape into medium size balls, and flatten the middle part, fry till brown.(not too long or else it will break)

    then,make a simple soup -

    -chicken stock

    -crushed garlic

    -1 stick cinnamon of 1 tsp ground cinnamon

    -1 star annise

    -2 tsp white pepper

    -salt

    serve in a bowl, and place the warm fried hamburger meatbals inside it, and u just got urself a comfy food !!

    you could do some spaggetti with meat balls. Some meat balls with tomato sauce, or make the ground meat with some vegetables.

    Hamburger recipes.

    (I’ve not made this one yet)

    EASY BEEF STROGANOFF

    Ingredients:

    3/4 lb lean ground beef

    1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)

    1 can mushrooms, drained (7 oz can)

    1/2 cup sour cream

    4-6 cups hot cooked noodles

    salt & pepper, to taste

    Instructions:

    In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.

    Hamburger Casserole/Pie

    1 lb. ground beef

    1 pkg.dry Onion Soup mix

    3 oz. tomato paste

    1 cup Cheese Crumbles

    1 4oz. container egg substitute

    1 box Jiffy Corn Muffin mix

    1.) Mix hamburger & onion soup mix in skillet and cook until meat is

    no longer pink. Add tomato paste and simmer for 5 minutes. Strain

    excess drippings from meat mixture.

    2.)Meanwhile mix corn muffin mix as directed and spread a thin layer

    in a 8" square cake pan. Set remaining mixture aside.

    3.)Sprinkle with 1/2 cup cheese crumbles.

    4.)Add meat mixture and spread evenly.

    5.)Sprinkle remaining cheese over meat mixture

    6.)Pour egg substitute over meat & cheese mixture.

    7.)Spread top with remaining muffin mix & bake 25 minutes at 350

    degrees or until golden brown.

    This was something I came up with (experimental) to use hamburger in another way.

    Cooking for 2 and don’t want a lot of left-overs….even though I had some….put in freezer for another meal later.

    Getting tired of burgers....meatloaf....chili.....etc.....and

    something my husband might like. (which he did)....with ingredients I

    had on hand. Could propably serve with sour cream and/or salsa.

    Thought about using Taco Seasoning & salsa....but didn't think he

    would like it as well. (Next time, maybe.)

    This would probably fit in a pie pan. I used a foil cake pan (bought

    at Dollar Tree...(almost an 8” square pan)…throw away when empty....easy clean-up).

    Old Settler's Beans

    INGREDIENTS:

    1/2 lb. ground beef

    1/2 lb. bacon

    1 chopped onion

    Brown in skillet and drain excess grease.

    ADD:

    16 oz.can Red Kidney Beans (drained)

    24 oz. can Pork & Beans (drained)

    1/2 cup white sugar

    1/2 cup dark brown sugar

    1/4 cup Catsup

    2 TBLS. Molasses

    1/2 tsp. dry mustard

    Mix Thoroughly !

    Cook in a crock pot until...hot...hot...hot!

    Stuffed Peppers for 2

    (Can be doubled, tripled..etc.)

    Mix together:

    1/2 lb.Hamburger (or gr. turkey)

    a pkg. of onion soup mix

    3/4 of 1 small can tomato paste.

    1/2 cup rice

    Prepare peppers.....cut off top and take out seeds.

    Fill with meat mixture. Place in an oven proof dish/pan that has a lid.

    Place any extra meat mixture in bottom of pan or make a couple of patties & freeze for future use.

    Mix remaining tomato paste with can of tomatoes (crushed....diced...etc. whatever you want to use.)

    Pour tomato mixture around peppers, cover and bake in 375 degree oven for 1 hour.

    Serve with cornbread or garlic bread.

    Poor Man’s Swiss Steak

    (can be doubled. Etc.)

    Mix: 1 lb. hamburger

    1 cup cornflakes

    salt & pepper to taste

    small amount dices onion

    Spread in a square baking pan.

    Pour: 1 can mushroom soup

    1 can water

    (combine together, first)

    Pour over meat mixture.

    Bake 45 minutes at 350 degrees.

    "Corny Beanie Weenies."

    (from a country preacher in Mississippi…wife & 2 teenage sons)

    Mix one can of good baked beans

    We use a good sized can of beans (14-16 ounces, I think) and

    get a kind that we like (maybe with brown sugar, onion, and bacon).

    There are several kinds of good baked beans.

    and a package of Oscar Meier Weiners (all sliced up).

    with a can of whole kernel corn (drained)

    Any way, heat up these three ingredients, and serve with brown bread

    (maybe toasted ?) and a glass of milk.

    It doesn't get any easier than this, and is suprisingly good!

    Pattsywattsy notes:

    1.)Might put ingredients in a casserole dish and top with corn muffin mix.

    2.)Use a pound of cooked gr. beef or gr. turkey or cooked Jimmy Dean w/sage sausage or some smoked sausage.
