Should I prune my zuchinni & pepper plants?

Update:

I want to know if I should cut back some of the older leaves on the plants, I know that picking the veggies will encourage them to produce more.

    As long as the leaves are a healthy green color leave them. Don't allow any of the fruit to ripen fully. Once that happens the plant will usually stop producing fruit. So just pick before the zucchini start to get too big and the peppers start to turn yellow.

    You may want to consider pruning: "Early season pepper plant pruning should not be done until the plant is at least a foot tall and can stop once fruit have set. That being said, the studies did find that if you prune peppers early in the season, the quality of the fruit was improved. So, pepper plant pruning is a trade off. You get slightly fewer fruit but those fruit will be bigger." More importantly, you should consider a cage for supporting your pepper plants. This will help ensure they don't become top heavy, especially when heavy fruit begins to emerge.

    Pick the fruit using pruning sheers when they are young and tender. This will encourage more fruit.
