I was wondering if anyone on here could give me some cheap and easy recipes to feed a family of 3?
Well, as we all know, the economy here in the U.S. really has taken a nose dive. The price of groceries is making it hard to feed the family and the price of gas makes it hard for us to go to the bigger cities to buy food at lower prices. So, I'm hoping that with all these brilliant people on here we could brainstorm and get some great suggestions and possibly some cool recipes too.

For cheap and easy, you can't beat potato soup. Peel and dice some potatoes into large chunks. Chop some onions and celery. Put it all in a pot, with some chicken broth (you can use boullion, for extra cheap. Just follow the directions on the package) and simmer until the veggies are tender. Add Salt and Pepper to taste and some milk to make it creamy (the milk is the last thing you add and make sure the soup is off the heat!). Serve with crackers, or even better, cornbread. I also like to buy pre-made tortellini and pesto. Add a small package of walnuts and some cooked frozed asparagus and you have a great meal that is inexpensive, nutritious and tasty!

This might sound weird but eggs and pasta work super well together and when you bake it in a casserole you can put anything in it you want. This comes from a mother of FIVE!!
All Recipes have good stuff but I also just google eggs and pasta and come up with fun recipes.
It's hard to go wrong with the kids because it's bland flavors but also easy to dress up. I do half and half or two separate dishes.
Some I use more "adult" cheese and others more "kid" cheese.

EASY SHEPHERD’S PIE
1 pound ground beef
2 cups hot mashed potatoes
4 ounces cream cheese
1 cup shredded cheddar cheese, divided
salt
pepper
4 cups frozen mixed vegetables, thawed and warmed
1 cup beef gravy
Brown meat in large skillet. Drain well. Mix potatoes, cream cheese, 1/2 cup of the cheddar cheese, salt and pepper until well blended. Stir vegetables and gravy into meat. Spoon meat mixture into baking dish. Cover with potato mixture. Sprinkle the remaining cheddar cheese on top.
Bake at 375 degrees for 20-30 minutes or until heated through.
Yield: 6 servings

My mom makes this casserole. It is called Topramon casserole.
She uses three chicken topramen packets, cream of mushroom, and shredded chicken in a can.
You boil the Ramon in water. Although you don't fill the pan full of water. Put only a cup of water and then cover the pan with a lid.
When the noodles are boiled you add the sauce from the packets, your chicken and the cream of mushroom.
You mix it all together and then put the mixture in a cake pan. You let it cook for ten more minutes and then sprinkle cheese to the top. Let it cook until cheese is melted and then serve.

I love the Taste of Home website- you can put in the number of servings, number of ingredients, and ease of prep- and they have a frugal section. The HIllbilly housewife is another one- with lots of tips and ideas.
My personal suggestions are to buy a deep freezer and grow veggies to cut down on trips to town... and plan before you do go. Browse the circulars on line to find the best deals, and if you need to go to two or more store- so be it, you are in town anyway. ( cooler in the car for frozen/refrigerated items) Here is a favorite:
Mustard Chicken
mix 1/2 mustard and 1/2 mayo
Spread on chicken pieces ( whatever is on sale)
Roll in bread crumbs ( to really be frugal- make your own with stale bread, toasted to very dry and processed- add whatever seasoning you like)
Spray cooking oil in pan
place chicken pieces in pan
spray cooking oil lightly over chicken
Bake in a 350 degree oven for 40 minutes.

well homemade pizzas are always good and cheap to...there are two different ways that i know of you can do the english muffin pizzas which is just english muffins cooked then you put pizza sause and cheese and put them in the oven until the cheese melts or you couls by the pizza crust mix wich from betty crocker is only $.99 a bag (which makes one pizza) and just follow the manufacturers instructions with your own topings they are great and cheap. hope it was help

Ten Minute Dinner
1 Pound ground beef
1 large onion, chopped
* 1 can (10 3/4 ounces) cream of mushroom soup, undiluted*
*1 can ( 10 3/4 ounces) cream of chicken soup, undiluted*
1 can (15 ounces) mixed vegetables, drained
1 can (5 ounces) chow mein noodles
Brown beef and onion; add both soups, mixed vegetables and 3/4 can of chow mein noodles. Pour into casserole dish. Top with remaining chow mein noodles. Bake at 400 degrees F. for 10 minutes or until hot.
NOTE: *Golden Mushroom with Sliced Mushrooms Soup can be substituted for the Cream of Mushroom soup OR Chicken Rice soup can be substituted for the Cream of Chicken soup.*
*THIS 10 Minute casserole is GOOD! GOOD! GOOD!*

Cook the Ramen Noodles. Add in your chopped vegetables and combine with the noodles. Cook until done. Do NOT use the flavor packet but season with Greek seasoning. YUMMY!!!

Hot Dog Casserole
You take hot dogs and cut them up. Add in mixed vegetables, chopped onion, tator tots, and a cheese sauce. Pour into casserole dish and bake until done.
