I use hickory chips all the time in my gas grill. Soak the chips in water for about an hour. Make a package of aluminum foil and place the chips in the center. Wrap the foil around like a pillow and secure tightly and poke several holes in it and place under the grates. Allow it to smoke before grilling your food! Keeping the cover closed is advised!

I have used hickory chips in a smoker box to give meat the smoke flavor. Soak the chips before you put them in the box and place the box over the burner at one corner, under the rack.

I actually switched to using the ceramic briquettes that have the smoke flavor built into them. Home Depot sells them and I just change them every summer.

I have, many times. I have a Weber gas/propaine grill and I have this small metal tray on the "flavor bars" and place hickory chips. I soak the chips, place them on the metal tray and it smokes beautifully. If you go to weber.com and look at their accessories, you'll find the tray there.
