Back to Traditional Grilling... Need help?

A long time ago, we switched to a gas grill - which later was replaced with a George Foreman Grill. I went full circle and got a Weber charcoal grill. The Taste is so much better!!! Anyways, I need some help... first, how do I control the heat. I like getting the grill very hot for good steaks but the flames go out of control. When I use spray water, I end up cooling the coals to much. Secondly, what are the vent for on a weber. I have one on the bottom one on the top.

    I love my Weber.

    Try this.

    Place the coals on one side of the grill, that way you have 2 heats, over the coals for searing and off the coals for indirect heat.

    The vents control airflow, closed they slow the burning and create more smoke.

    I think you want both vents open for grilling.

    Just pile up the coals, light them, let them get white, and spread them out. Should be more than hot enough to grill a good steak. Just be patient. If you can adjust the height of the coals, get them as close to the steak as possible for a good char.

    You shouldn't have flames besides the occasional grease flare up. The burnt grease adds flavor, but you don't want too much.
