What you likely think of as mustard colour is the colour of the spice called tumeric.
It gives that nice bright yellow.
Next time your in the groceriy store liik at the specialty mustards that show differentshhades oh greay, yellow and even brown.
Where I live we have prepared mustard which is the same bright yellow as you know.
What I usually buy for my spices rack is Keen's powdered mustard.
It comes in a tin. It does not need to be kept in the fridge.
You just mix it with a bit of water 5 minutes before you want to use it.
There is no tumeric in it so it is a more natural yellow
Careful with it is because with straight cold water it is hotter than horse radish or wasabi.
It is great on a ham sandwich or plastered on your chest when you have a cold.

That's because mustard is a very specific color.
There are shades and tints of green, but there aren't shades or tints of say, chartreuse.
