I know some people who sprinkle salt on sweet-tart fruits like pineapple because they like it that way. And I've seen some street vendors here do that and I think the reason is to preserve or pickle them so they last longer.

In baking or cooking , they say adding a bit of salt enhances the sweet flavor.

    Soak Pineapple In Salt Water

I has fast east Asian background, and in my home town it is almost unheard of to eat pineapple without soaking in salty water. When I was little I asked my parents why a sweet fruit need be in salty water, and the answer was to prevent it making your mouth sore. As I grow up, I realise that would be universal answer you would get if you are in fast east asia; and it is so true for me too, without soaking it in salt water, my mouth would be very uncomfortable after eating fresh pineapples.

Could be to cut down on the acid in it. I know that pineapple when it is fresh makes my mouth so sore. Have heard to put salt on it so bet this would be another way to cut the acid.

For Asian, such method is to reduce the acidity of fresh pineapples but not canned products.

If the pineapple is not sufficiently ripen, its acid level will

be rather high and after consuming said fruits, a irritation feeling (acid reaction) is on the tongue but it will fade away after sometimes.

The other reason for using salt is to enhance the flavour of the fruits. In Thailand, fruits vendors will include a mixture of grounded dried chilli, sugar and salt for the fruits. It is rather nice, with the spicy taste.
