Does anyone know a close recipe for KFC original recipe coating?

Some time ago they showed how to copy it on "Oprah", but I missed it

Something about Italian spice mix. Any help would be great.

    This is better than KFC's...

    8 cups flour

2 tbsp onion salt or powder

    2 tbsp white pepper

    2 tbsp celery salt

    2 poutry seasoning

    2 1/4 tbsp salt

Mix well, and keep unused prtion in an airtight container.

To fry. Dip chicken in very cold water, then flour, then water and flour. Drop into 350 degree oil for exactly 15 minutes.

If you are doing a large amount sift the flour after about every 5 or 6 pieces. Adding new flour as needed. If you don't sift the flour it will clump and will end up in hard bits that will hurt your teeth.

The coating is believed to be flour, salt, pepper, and MSG. Dip the chicken in an egg and milk wash, toss in the coating, and then deep-fry in a pressure cooker at about 400F/205C.

Source(s): The full recipe is in "Top Secret Recipes" by Todd Wilbur (1993, Plume/Penguin, ISBN 0452269954). I'm assuming that this is the same recipe you saw, as Wilbur has been on Oprah a number of times.
