I want to bake bnb muffin or a small bread?
I need to make this simple and quick...but I only have one ripe banana (1/3 cup)
can I still bake half doz of muffins or a small loaf? what else, besides nuts can I use

yes, it just won't have as much of a banana flavor and you'll have to add something else, like applesauce, grated apples or pumpkin puree.
if you don't have nuts (or would like to add something more) you can add oatmeal, millet flakes, flax seeds etc.
I'd use whole wheat to make it healthy
baking powder lasts a while

Yes. Spray the pan with cooking oil, but not too much, because then the muffins will have a funny taste. Also, be very careful when you pull them out. Kind of shake the pan, and the loosen the tops gently. Then either pull the muffins out from the sites (towards the bottom of the "poof", if you know what I mean; the fluffy part on top?) Hope they turn out well!
