Cottage cheese is my secret ingredient in scrambled eggs. It makes the best fluffiest scrambled eggs!!!! If you beat some in with the eggs, it'll melt out while they're cooking and make them super fluffy and give them sort of a creamy taste too!!! TRY IT i swear by it

Cottage Potatoes
Ingredients
3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika
Directions
Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Fill a pear half or peach half with it and place that on a lettuce leaf. My grandmother always made it at home and it was excellent. A cheese-cloth sack hanging on the back porch full of cottage cheese draining was a hint that good eating was ahead in the near future. God bless Granny.

Eat it with apple butter. Hmmm, that's a PA Dutch tradition, but I am from a small PA town. Cottage cheese and apple butter is even a "side" at the restaurant chains in my home town.

Scoop out the middle of pickle halves and fill the pickle with cottage cheese. Yummy.

COTTAGE CHEESE PANCAKES
1 cup cottage cheese or ricotta
4 eggs, beaten
1/2 cup flour, sifted
6 tablespoons butter, melted
1/2 teaspoon vanilla
1/4 teaspoon salt
Using a potato masher or hand mixer, mix cottage cheese or ricotta with other ingredients.
Heat a griddle or frying pan. Melt a pinch of butter on the surface of the pan and swirl around to coat evenly, or alternatively, use a paper towel dampened with vegetable oil to wipe the hot pan down.
Spoon the mixed batter onto the hot surface, creating pancakes 3 inch diameter pancakes.
Turn only once to cook both sides evenly.
Serve with fruit in its own syrup (such as strawberries, blueberries, peaches or pineapple), or top with applesauce, fruit jam or maple syrup along with a pat of butter.

COTTAGE CHEESE SALAD
1 box Jello (any flavor)
1 16 oz. small curd cottage cheese
1 12 oz. can of crushed pineapple
1 10 oz. tub of whipping cream
Drain the pineapple. Mix the cottage cheese and whipping cream together, until well blended. Next, stir in the pineapple. Mix well.
Stir in Jello mix. Mix well until Jello is completely dissolved. Chill 4 hours prior to serving.

COTTAGE CHEESE BISCUITS
2 c. all purpose flour
1 tsp. salt
2-1/2 tsp. baking powder
6 tbsp. (3/4 stick) unsalted butter, chilled
1-1/2 c. small curd cottage cheese
Sift the flour, salt and baking powder into a large bowl. Cut the butter in with a pastry blender or 2 knives until it is the size of small peas. Stir in the cottage cheese all at once. Drop by generous tablespoons onto ungreased cookie sheet. Bake in preheated 450 degree oven until golden, about 15 minutes. Makes approximately 18 soft, doughy biscuits.

COTTAGE CHEESE FRUIT SALAD
1 (2 lb.) cottage cheese (sm. curd is best)
1 lg. carton Cool Whip
1 lg. can fruit cocktail (drained)
1 box jello (strawberry or any other flavor, to taste)
Mix jello (dry) into cottage cheese. Stir in drained fruit and Cool Whip. Add nuts, if desired.

COTTAGE CHEESE NOODLES
2 c. flour
2 eggs
Pinch of salt
Water
4 tbsp. butter, melted
1 c. sour cream
1 lb. dry cottage cheese
3 slices bacon
Mix flour, eggs and salt. Add water if necessary to make a stiff dough. Knead until smooth. Roll out into a thin sheet and cut into strips. Cook noodles in boiling salted water. Rinse and drain well. Melt butter in pan. Add drained noodles, sour cream and cottage cheese. Fry bacon and cut into 1/4 inch pieces. Sprinkle over noodle mixture. Heat and serve.

COTTAGE CHEESE PIE
3 eggs
1/2 c. sugar
1/2 c. Half and Half
2 tbsp. all-purpose flour
2 tsp. lemon juice
1/8 tsp. salt
2 c. sm.-curd cottage cheese
Unbaked 8-inch pastry shell
1 tbsp. sugar
1/2 tsp. cinnamon
Combine sugar and eggs in blender. Process for 15 or 20 seconds until well blended. Add Half and Half, flour, lemon juice and salt. Process 15 to 20 seconds longer, or until mixture is smooth. Add cottage cheese and process at medium speed until smooth.
Pour into pastry shell and bake at 350 degrees for 40 to 45 minutes or until filling is set. Combine 1 tablespoon sugar and 1/2 teaspoon cinnamon and sprinkle over while pie is still warm.
