I think the issue is: was there water as cloudy as wine during Roman times in Israel? And the answer to that would be yes. Without water purification techniques, in a dry climate such as Israel, water likely was often not crystal clear, and could have had enough dirt, sand, and other particulate matter in it that it looked like "white" wine.

I know where you're going here. He turned the water into wine. It wasn't white wine, either.

sounds like a history question, not a religion question.
Wine and beer were thousands of years old at that point. I'd imagine that they were pretty good at it by then and could make a decent and clear white wine.

There were several Chardonnays that were almost transparent. They went well with the fish of the day.

I suppose there could have been white wines that were reasonably 'transparent' :)
