What can I make with beef broth?

The other night I made a dish that produced about half a gallon of beef broth. What can I do with it besides beef stew and french onion soup?

    I use beef broth in chili, Homemade beef and noodles or beef and dumplings. You can also just had a bunch of vegetables and have vegetable soup.

    Vietnamese Beef Noodle Soup

    4 ounces dried rice noodles

    6 cups cold water

    3 (10.5 ounce) cans condensed beef broth

    1 teaspoon chopped fresh ginger root

    1/2 teaspoon kosher salt

    1 Thai chile, chopped

    1/2 pound boneless top round steak, sliced very thin

    1/4 pound fresh basil

    4 tablespoons snipped fresh cilantro

    1/4 pound mung bean sprouts

    4 green onions, thinly sliced

    4 wedges lime

    hot pepper sauce (optional)

    oyster sauce (optional)

    Soak noodles in cold water for 30 minutes. Drain. Bring water to a boil in large pot. Add noodles, and boil 3 to 5 minutes - don't overcook. Drain, and rinse with cold water. Set aside.

    Meanwhile, combine beef broth, ginger, salt, and Thai pepper in a saucepan. Bring to a boil, and simmer for 15 minutes.

    Place equal portions of noodles into 4 large soup bowls, and place raw beef on top. Ladle hot broth over noodles and beef. Garnish with lime wedges, basil leaves, cilantro, mung beans, and green onions, and serve with hot pepper sauce and oyster sauce.

    I would freeze some to use in the future in pint sized containers, make up a big pan of gravy and freeze in smaller containers.

    It would be a good base for any number of soups. I am thinking of Veggie soup, but mushroom, minestrone or consomme would be options worth considering..

    French Dip Sandwiches

    2 tablespoons butter

    1 shallot, chopped

    1 tablespoon all-purpose flour

    1 jigger dry sherry, optional

    4 cups of your beef broth

    1 1/2 pounds deli sliced roast beef

    Grill seasoning blend for steak, such as Montreal Steak Seasoning Blend, or, coarse salt and pepper

    4 torpedo sandwich rolls, split

    Directions

    In a large, shallow skillet over moderate heat, melt butter. Add shallots to butter and saute 2 minutes. Add flour to butter and shallot and cook a minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.

    Pile meat loosely across your cutting board or a large work surface. Season meat with grill seasoning or salt and black pepper. Set out 4 ramekins or small soup cups for dipping sauce, 4 dinner plates and 4 split torpedo rolls. To assemble, using a pair of kitchen tongs, dip meat into loose au jus sauce and pile into rolls. Set ramekins or cups with extra dipping sauce along side the sandwiches.

    measure it into zip lock freezer containers by the cup. Then you will have beef stock when you need it for other recipes. Always need good stock!!

    You can use it instead of plain water to make rice, or (and this is the best) you can use it to make Fondue.

    You can use it instead of water in meatloaf or you can boil pasta in it for meatsauce dishes.
