Burt Wolf who has done several series under different names is fascinating to me as he travels from country to country and through them based on their food and food history. I love it. That's how I discovered why I don't like jalapenos much but really like Thai bird's eye peppers (they effect different parts of the mouth).
However, I started watching Art Wolfe's Travels to the Edge because I thought I was mishearing the announcer thinking I was about to be treated to a Burt Wolf show. This sucked me in even after several bait & switches... (heh) but I'm glad because he's done a few on Pantagonia which has been delightful to learn about.

Journey to Planet Earth is amazing too showing the environmental perspective and how we affect it and each other (some food issues hit on here as well).

And finally I like Martin Chan not so much because of his food which has a lot of meat and seafood but because he makes me laugh. He always adds a "tiny bit" of everything from chiles, to garlic including oodles of rice.
Hope you're having a great week and thanks for asking :)

I love Locked up Abroad on National Geographic. Maybe not exactly a travel show, but it does give interesting information about life in other countries and is always a chilling cautionary tale about how to take care of yourself abroad.

My favorite show is an oldie called "I Spy" with Robert Culpp and Bill Crosby. It took place in a different country each week. Not a documentary, but it was still a cool thriller.

I seen Rick Steve's show a few times! It has been awesome! I would not mind making a show like that myself someday! :) I'd make shows about different spots in America.
I also love, Love, LOOOOOVE Postcards From Buster. It is an Americna PBS show about an animate rabbit named Buster, and he travels the America to talk about different places and meets different real-life kids.

I think one that is essential in its artistic depiction of the world from a geographical/ anthropological view is Baraka. It is a filmography of the world set to music that almost seems to be the world looking at itself. Starts off slow and meditive and gets quite intense toward the middle.

I like Rick Steves' Europe. For me he strikes a nice balance going "off the beaten path" to find real slices of everyday culture and also mentioning important museums and landmarks to see.
I also like his little interviews with denizens of where he's traveling, descriptions of culture and color, and his tips on doing it on the cheap.

I love watching Globe Trekker, don't know if that counts, I love the way the presenters go to parts of different countries that I wouldn't normally go to, most people (including me) go to the main cities of a country. it's fascinating to watch.
