Easy banana bread recipe?
I have 3 very ripe bananas and do not want to waste them. Looking for an easy banana bread/muffin recipe. Best answer for the recipe I use!

¾ cup butter (softened)
1 ½ cups sugar
3 bananas (blackened)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
2 cups flour
¾ teaspoon salt
½ cup milk or cream
Step 1: Pre-heat the oven to 350 degrees, and In a mixing bowl cream butter and sugar. Mash bananas by hand and add to mixture. Add in eggs, vanilla extract, baking soda, flour and salt. Stir in buttermilk and chopped nuts.
Step 2: Pour mixture into 1 or 2 greased loaf pans.
Step 3: Bake at 350 degrees for 1 hour and 15 minutes (or until a toothpick comes out clean or almost clean).
Its sooooooo good!

I've been using this recipe for years and always get asked for it. It makes a moist heavy loaf. Great made in muffin tins too! Banana Bread with Streusel Topping 1 c. sugar 1/2 c. butter (or margarine, even vegetable oil will work!) 1 tsp. baking soda 1 tbs. orange juice (or any acidic juice) 2 eggs, well beaten 3 mashed bananas (very ripe!) 2 c. flour 1/4 c. chopped walnuts nuts (optional) 1/4 c. chocolate chips (optional) Streusel Topping 1/4 c. brown sugar 2 tbs. butter 2-3 tbs. flour 1/3 c. chopped walnuts Method Preheat oven 350 Cream together butter and sugar. In a small glass, stir baking soda into orange juice. Add to butter mixture. Add eggs, bananas, soda mixture and flour, beating thoroughly. Stir in nuts and chocolate chips (if using). Pour into a buttered loaf pan. Bake for 1 hour or until a skewer inserted in the centre come out clean. Enjoy!

Banana Bread
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Ingredients
½ cup butter, softened
¼ cup vegetable oil
1 cup white sugar
½ cup brown sugar
2 eggs
1½ cups mashed ripe bananas (I use 3 medium well-ripened bananas)
½ cup sour cream
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
additional brown sugar for top of batter
Directions
Mix together butter, oil, sugars and eggs.
Add mashed bananas, sour cream and vanilla, stirring together well.
Mix in flour, baking soda and salt, stirring until it is well blended.
Pour into 1 greased large loaf pan or 3 small loaf pans (I always use 3 of the 7 3/8 x 3 5/8 inch loaf pans - I think it gives the best results).
Sprinkle additional brown sugar generously over top of batter, using your hand to gently pat some of it into the batter.
Bake at 325 degrees: large loaf pan for about 1 hour, smaller loaves for about 45 minutes.
Allow bread to cool in pans for about 20 minutes, then run a sharp knife around the edges, tap the pan on the counter several times to release the bread from the bottom of the pan, then invert pan over a wire rack and let the bread fall onto the rack to finish cooling completely.

This one uses butter instead of oil and also uses some whole wheat flour.
½ cup (1 stick) butter, at room temperature
¾ cup sugar
2 eggs
1 cup all purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup whole wheat flour
3 large ripe bananas, mashed
1 teaspoon vanilla
½ cup shelled walnuts, coarsely chopped
Preheat oven to 350F. Grease 9 x 5 x 3 bread pan.
Cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Sift all purpose flour, baking soda and salt together – stir in whole wheat flour and add to creamed mixture, mixing well.
Fold in bananas, vanilla and walnuts
Pour mixture into pan and bake 50 to 60 minutes or until cake tester comes out clean. Cool in pan 10 minutes, remove bread from pan and cool on rack.
Makes one loaf.

Quick Banana Loaf
185g self raising flour
55g caster sugar
2 medium ripe bananas
1 egg, lightly beaten
60ml skimmed milk
1 tbsp low fat margarine
1 tsp cinnamon ( optional)
Heat oven to 220 C
Add cinnamon to flour and rub in margarine.
Add egg, milk, mashed banana, sugar and mix together.
Place in a lined bread tin and bake for 20 – 25 mins
i halved the sugar in this recipe - was originally 110g , works fine with 55g :)

1 1/2 c. flour
2/3 c. shortening
1 c. mashed bananas
3/4 tsp. soda
1 tsp. vanilla
1 c. chopped nuts
1 1/2 c. sugar
2/3 c. buttermilk
1 tsp. baking powder
1/4 tsp. salt
2 eggs
Combine soda with buttermilk. Mix sugar, shortening and eggs
thoroughly. Add dry ingredients and milk alternately. Add
bananas, vanilla and nuts. Put in bundt pan that has been
greased and dusted with flour, or place in loaf pans. Bake at
350f for about 45 minutes.
