You can create an account for him on yahoo, Gmail, MSN, or a similar email server. To do this, just go to the site of your choice and create an account. Gmail is easy and efficient at account creation and has a high storage capacity for emails.
If you are trying to create an account where you will still be able to monitor his emails than there is no easy solution. Depending on the age of your son, I can pretty much guarantee you that he either already has an email account somewhere that you don't know about, and that he will change the password after you set it up.
