Tried lace yet? There are some small washcloth patterns available in knitted lace that teamed with some handmade soap would make not only a challenging project, but a nice stocking stuffer. They are also a great preliminary project to larger lace pieces, and are done in fingering weight yarns similar to sock weight yarns. FiberTrends has two washcloth booklets where the cloths are done in fairly simple lace. Bathing Blossoms is one of them.

I think a hat would be a fun next project. It can be challenging as well, depending on the pattern.

If you get good at it, you can always knit tiny preemie caps and donate them to the hospital!! (Challenging, and makes you feel good. :) )
I've always wanted to knit a sweater as well. But I mostly stick to square/rectangle things: scarves, blankets, purses, etc.

I made a Hogwarts School Scarf (Harry Potter) a couple of years ago and I found the pattern on the net I'm a big fan and it made a big scarf and it's the warmest one I have. I don't have the particular pattern I used anymore but you can find patterns for them at:

Knit a tiny rug for a doll house with fringe on the ends and sell it on ebay! Or 2 doll house pillows.
