Pork roast ideas for a new cook?

I have a pork roast I was planning on cooking tonight. I have a roasting pan. Sorry I'm learning to cook so I'm not sure if I need to have it in some stock or something while it is cooking. I'm kind of tired of the same old potatoes and carrots so any nice side dishes would be nice. We don't care for onions or garlic. TY in advance. Please simple ideas because I'm just learning. LOL I don't want the fire department coming out to my house.

    This is how my mother has always made pork roast, and I have been making it this way for about 40 years, too. You can leave out the onion soup if you want -- it's just as good without it. (You can also leave out the onions on the side recipes.)

    Preheat oven to 350 degrees. Place roast in large casserole with high sides -- you need the high sides to catch all the drippings. Pour one can Cream of Mushroom soup on top. Sprinkle dry Lipton Onion Soup over the cream soup. Cover with heavy duty aluminum foil, seal well.

    Bake in oven for 1 1/2 - 2 hours -- depending on how large your roast is.

    This is what my mom prepares for me every year on my birthday -- along with mashed potatoes.

    Here are some sides you might prefer:

    Rice Pilaf

    1 tablespoon butter

    2 tablespoons olive oil

    1 onion, chopped

    2 cups white rice

    4 cups chicken broth

    salt and pepper

    Melt butter with oil in large saucepan over medium heat. Add onion and sautee until tender. Add rice and cook for 2 minutes. Pour in broth and seasoning, bring to a boil, stirring frequently. Cover, reduce to low heat, simmer for 20 minutes. Remove from heat and let sit for 5 minutes before serving.

    Corn Muffins

    2 boxes Jiffy cornbread mix

    2 eggs

    1 can cream style corn

    Preheat oven to 400 degrees. Mix all ingredients just until moistened. Allow to sit for 5 minutes, grease muffin pan(s) for 12. Stir mixture gently, then evenly distribute into muffin pan. Bake for 15 - 20 minutes until golden. Allow to cool in pan about 1 minute, gently remove from pan.

    Creamed Peas

    ½ bag frozen green peas

    ½ onion, diced

    ¼ cup heavy cream

    2 tablespoons butter

    salt and pepper

    Cook peas in water to cover in saucepan until tender, about 5 minutes. Drain in collander. Melt butter in same saucepan and sautee onions over medium heat until transparent. Add peas, salt and pepper and heavy cream. Simmer over low heat for 5 minutes.

    German Style Green Beans

    2 - 3 slices bacon, fried crisp

    3 tablespoons onion, chopped

    1 can green beans, drained

    2 tablespoons vinegar

    1 tablespoon sugar

    Reserve bacon drippings in skillet. Sautee onion in drippings until transparent. Add beans, vinegar and sugar. Heat over medium heat stirring frequently for about 10 minutes. Crumble bacon over beans and toss before serving.

    Italian Vegetable Medley

    1 bag frozen Italian vegetables, steamed

    3 tablespoons olive oil

    1 tablespoon balsamic vinegar

    ¼ cup Parmesan cheese, grated

    salt and pepper

    Toss all together while vegetables are still warm.

    Also good with Stovetop Stuffing.

    I love pork roast for a cold winter evening!!! Here's my recipe that you might enjoy:

    Rub: 2 T kosher salt, 1 T fresh ground pepper, 2 T rubbed sage

    Liberally massage rub into all surfaces of the roast. Place in roasting pan and add 1 cup white wine to pan. Do not cover. Bake at 350 degrees for 1 1/2 hours or until cooked thru. Continue adding liquid as pan dries out.

    When roast is finished, remove from pan. Place pan on burner and deglaze with 1/2 cup white wine. Be sure to pick up bits of brown stuff in pan (most flavorful!) Add 1 T dijon mustard and 3 T orange

    marmalade or 3 T honey.. Spoon over slices of roast when serving.

    I normally serve my roast with glazed ginger carrots (carmelize an onion in butter and brown sugar and toss steamed carrots and carmelized ginger with them before serving); and mashed sour cream potatos with it. I have also served fresh green beans cooked with bacon and onion (cook in chicken broth over low heat for until beans are very tender and the broth is thickened)

    If you cook it early enough, don't have a roast dinner

    Let the meat cool and shred it

    Use the meat for tacos or burritos or fry potatos and make a hash

    I've never made a roast for a roast dinner

    I always cook it up and do things with the meat
