I am a type one diabetic and hereare my feelings on the subject:

The problem with organ donation for Diabetics is that the organs are usually saturated with insulin. However, if you do not the symptoms of diabetes you can donate even if you develop symptoms later in life. Kidneys are not related to the onset of diabetes but are the target of negative effects. If you feel however that you might develop it later, it might be better to wait and see if your fathers doctors can find another match as you may need one yourself should you develop it.

If you see that your dad isn't in control of his diabetes then I doubt you will do the same as he did. You learn from other peoples mistakes.
