is boiling cooking oil in a stainless steel pot with a copper bottom safe?

i came home from work today and saw where my wife had made french fries in a pot (maybe 2-3 quarts?) like a fry-daddy. it was a stainless pot with a copper clad bottom (now the copper is discolored: kind of rainbowed and dark, like what stainless steel looks like when you heat it with a torch). just wondering if this will damage the pot, potentially injure the wife, burn the house down, ar any combination of the three....personally i have no idea since i have no experience with the dos and don'ts of frying

The pot is fine it just needs to be scrubbed to get the discoloration off. It is perfectly safe to fry in a stainless steel pot. I have fried in almost every type of pot and pan during culinary school and home use.

A copper clad pan is just that, copper clad. It is copper with an aluminum core. When heated too hot the aluminum will burst into flame even though it has copper on the outside of it. The copper is just for visual appeal. When purchasing a pan read the documentation that comes with it. If it is clad it will have an aluminum core. If it say copper bottom then it will be a true copper disk on the bottom of the pan.

Personally I would never use a copper clad pan to heat oil. Please read the article on the web site listed below for your safety.

That pot is just fine for frying. It copper is simply discolored due to the high heat needed for frying. The pan will clean up.

Any copper pan is going to discolor when you heat it.
