    Hmmm...think I'll make these tonight myself!

    I love country fried steak or chicken fried steak. I have tried many recipes, and combined the best of all recipes to create my own.

    I use cubed steak. If your grocer doesn't have cubed steak, ask the butcher to put some round steak in the cuber.

    In one dish put in buttermilk, it makes a the coating stick on it the meat much better than an egg wash.

    In another dish, put in flour with some garlic powder, onion powder, black pepper, and I have put in cayenne pepper for a kick, but you can omit it.

    Salt your steaks on both side.

    Put about 1/2 cup of oil in your skillet and heat your skillet.

    Dip steak into buttermilk then flour. Fry steaks 2-3 at a time depending on your skillet and steak size (don't over crowd the pan) in hot oil. Fry about 5-6 minutes on each side until brown. When done put on a paper towel lined plate to get the grease.

    To make gravy, pour out oil except about 2-3 tablespoons. Add about 2 tbsp of flour to the pan and mix the flour with the oil and the cooked bits - scrape the pan bottom to get all the cooked bits up. When it gets bubbly, pour in milk (about 2-3 cups) and cook until thickened. Add more milk, if it's too thick. Add cracked pepper and salt (if needed).

    I serve this with mashed potatoes and corn on the cob or some good green beans.

    Chicken Fried Steak

    1. Cut round steak (sirloin OK too) into about 2 inch square pieces

    2. Dust the pieces with seasoning and flour

    3. Tenderize the pieces - pound in seasoning and flour

    4. Soak pieces in mixture of milk and egg

    5. Deep fry in vegetable oil (Canola), turn once

    When cooked, drain on paper towels over newspaper, put in warm oven. Only bread and fry enough steak pieces to float in the pan at one time. Keep oil hot.

    Milk gravy:

    Drain oil keeping about 1 - 2 tablespoons and as much of the brown stuff on the bottom as you can. You might invest in an oil filter if you deep fry a lot (no longer PC), but coffee filters or a sieve can work. Slowly add warm milk to the pan remains to make the gravy - don't boil just keep hot. Season to taste.

    Serve with mashed potatoes and fresh veggies if you can get them. Corn, green beans, sliced tomatoes.

    We put the gravy over the potatoes and dip the steak into the gravy.

    Definitely not "heart healthy" but so good.

    Chicken Fried Steak here, too! Cubed steak, then beat it even thinner, dip in seasoned flour, then buttermilk, then seasoned flour again. Fry until golden brown.

    Best sides are Mashed Potatoes (w/ white gravy only, no brown) and some kind of veggie-- green beans, corn, green peas, field pies, black eyed peas, etc. (and yes, I realize most of those are starchy veggies! LOL)

    It's Chicken Fried Steak in Texas, darlin. My favorite way to make it is to eat out. KFC has $2 CFS Wednesdays. Taters and cream gravy, slaw, bisquit or fries. Fried green tomatos if they're in season or fried okra is also good.

    chicken fried steak ultimate comfort food unfortunately i live in the norhern part of the the country hard to find up here in MN

    egg wash, and flour pan fried with white country gravy, served with hot biscuits, mashed potatoes (with more gravy on it) and fresh green beans. Yum is it dinner time yet?
