How to keep homemade rice crispies from drying hard?
When I made rice crispies last time, after they cooled off, they were no longer soft/squishy like when they were first made, or like they are at the store when you buy them. Any ideas how to keep them soft? I covered the dish as soon as they started cooling off and were still soft but did not want to sooner so the moisture from steam wouldn't be trapped in there or the plastic cover wouldn't stick to the side of the dish.
I made them with marshmallows, butter, and rice crispie cereal..or whatever the rice crispie box said to use.. is there a trick to make them stay soft? It was within that day that they got like that.. :(
Thanks! I love rice crispie treats and my husband got me one of the really big ones for my birthday..lol..so I'd love to learn how to make them on my own but where they don't get weird after cooling off. :)
lol yeah I mean the rice crispie treat/squares. Sorry for the confusion :-)

You mean rice krispie squares?
If you were making rice krispies I'd be very impressed.. lol...
The treats you are making are called rice krispie squares or crisped rice treats - calling them rice krispies is very confusing since the cereal is also called rice krispies...
But anyway...
Homemade rice krispie squares are usually more firm than the storebought ones, but, I'd say one trick would be to make sure you are melting the marshmallows on very LOW heat. If you're using the microwave, do it JUST BARELY until they are melted, and no further. The more you cook the marshmallows, the firmer they will be when they harden. So try to just BARELY melt them. Or even under-melt them, and they will finish melting as you form them.
Also, don't press them into the pan too firmly. Pack them only loosely. The more you pack them, the firmer they will be. I know this because one time I tried to mold them into shapes... pressing harder makes harder treats.

You may have over cooked the marshmellow mix. Remove from heat as soon as the marshmellows are 2/3 melted-there will still be some marshemollow "lumps".
I made some for valentines day, and when they were well wrapped they lasted for about 2 weeks prefectly.

Put them in an air tight box and store them in a cool and dry place.
