Artichokes make things like water taste sweet after you eat them?

Why is this?

I figure it is a chemical source but... ?

    Because they are mostly water...

    it is from an enzyme that Inhibits most taste receptors and causes foods to taste sweet, especially wine. artichokes naturally contain an acid called cynarin. even though you won t taste this it makes things taste sweeter. Some people are more sensitive to this then others and some don t notice it at all.
